The biggest surprise to me was the peanut butter. I have opened up a jar of peanut butter and weeks later (well maybe months) there is separation and the oil has floated to the top. I wonder if the ingredients were different back then and there was less separation. As far as the other stuff goes, it's vacuum sealed in a can with no air and probably a lot of salt so it will keep most germs,mold out. It's just a matter of the food can stay together. Those potatoes had a spooky dead white color as opposed to a normal white potato color.

Interesting and thanks for posting. I volunteered at a local food pantry of our church one summer back in 1992...early on I noticed quite a few expired cans of soup as I was stocking the shelves. I told the director and he asked if I would pull all those on the shelves that had an expiration before the current month. We opened a can of Campbells chicken noodle soup, expired in 1980 (so the can was made in 1977 or 78), so 12 years expired then...it was pristine! We found some cans that were much older of course, dating to the 1950s in a few cases, but most were within five years it seemed. It was understandable that some people would donate older cans as the labels often looked so much the same on the Campbells....but some other brands not so much the case and they were dead giveaways. I finally got the stomach to open an old Dente Moore can of beef stew, we thought from the 1960s based on the style, price tag...was like sludge with lumps and most of the juice was gone. Not pleasant at all. It was a good thing I happened to notice the expiration dates! Generally, you can expect it to be alright even a little past expiration...after a year or two, you might start seeing color changes, not quite as moist as it should be. Bacteria can still grow to dangerous levels in an old or damaged can, but look and smell ok.

This man could of saved these cans until they became 100 years of age and given them to his children as an inheritance. *At least they smell good.*

Much as I love your vintage roadside Rival can opener, I have one that breaks the seal on the can rather than poking a hole in the top or bottom. You attach it to the top rather than the side and it preserves labels and gives you an automatic lid you stick right back on.
