Perfect orange glaze
I usually make this for a slow cooked piece of pork belly, spread some over the crackle and under the griller for a minute or two. Absolutely scrumptious!

RECIPE: Orange Glaze
It doesn't really matter how much orange juice you have as long as you have at least a litre.
Oranges/mandarins/tangelos or a mix of all 3
1 cup white sugar
2 or 3 star anise
zest or peel of 1 or 2 oranges
2 tbls orange marmalade
2 tbls mirin (optional)
piece of cinnamon bark
pinch of salt
Put all the ingredients into a pot and bring to a slow boil. Reduce liquid until bubbles rising to the top are the size of a pea.
During the reducing process, you will need to skim the scum from the surface of your sauce frequently.
When the sauce has reduced to 1/2 to 2/3s, take out the star anise, cinnamon, and anything else making it lumpy. You may need to strain it, but it's not absolutely necessary.
You now have a perfect orange glaze!
