Detailed recipe below. We are cooking our toddler’s favorite side dish (roasted sweet potatoes) and then we sit down to eat and have some adorable lunch conversations! She’s learning about what to do when the food is too hot to eat!
Roasted Sweet Potato Halves Recipe:
I prepare these ahead of time and make about 3lbs, so they are ready in the fridge. I call it partial meal prepping, which seems less overwhelming to me than a full meal prep for the week.
Ingredients:
-3lb of whole sweet potatoes
-Good olive oil
-Kosher or pink himalayan salt
-Fresh ground black pepper
Instructions:
1. Preheat oven to 400 degrees
2. Cut washed sweet potatoes in half, length-wise
3. Place them cut side up on a baking sheet
4. Brush with olive oil, then sprinkle with salt and pepper.
5. Flip potatoes so the flat side is down.
6. Brush the skin side with olive oil, then sprinkle with salt and pepper.
7. Bake for about 30 minutes at 400 degrees.
8. Remove from the oven and use a turner to lift and flip the potatoes while they are still hot, so the cut side is up. The flat, cut side should be caramelized and brown.
9. Let cool for 5-10 minutes, then serve.
