i just cooked these...used some Crown Royal instead of brandy (its all I had lol) came out marvelous! keep doing ya thing...PS them vegans still want them Lemon Pepper Cauliflower thangs! lmbo
I tried the wings and I couldn't get my skin to crisp on them. They were soft. I used the rack like you. I'm not sure what I did wrong. I cooked them for about 25 to 30 min each side. The sauce was delicious I did half with this sauce and half with your sticky Asian recipe. Do you have any suggestions to make the wings crisp?

OH MY GOD! I just made these wings and they are the BOM!!! Instead of hot sauce I used a sprinkle of cayenne pepper and a little ground ginger for taste. Finger lickin GOOD. They were cooked to perfection also...fell right off the bone. Thank you!
Yes, that does happen with some pieces of the chicken and its normal. What I do when I can visibly see a blood vessel in my wings. I apply pressure to that vessel and it comes out. Also you can brine it in salt water prior to cooking to decrease the chances of bleeding. But this is why I like to deep fry my chicken when I do fry it because it eliminate this.

I find it mostly here in South Florida at Caribbean supermarkets. But ordering from their website is best if you don't have a Caribbean supermarket in your area.
