I came to a realization a few years ago that if I can put something in a crockpot, im probably gonna cook it in a crockpot lol. The last time I cooked some we did mushrooms and cream of chicken and it was good enough to hook my daughter on rabbit
I grew up eating rabbit from my dad's hunting exploits. We either made a stew with root vegetables and barley (traditional Irish way), or oven roasted in foil with white wine and garlic.

I don't know which was better - you with the cleaver or the look on your face when you realized the mushrooms were still on the counter.....nice recovery! We've had that cleaver for almost a year now and my husband JUST told me about it!!! I had no idea we had that thing! So now I use it all the time even when I don't really need it haha Yep and luckily I saw the mushrooms before I put everything in the oven! Thank you!
@@LagomEats I just got the "Obliterator" from Dalstrong. I really wanted to try to use it to carve the leg of lamb I'm publishing today but the "you're an idiot" looks from my daughter were too much to take so I had to use my 2nd most insane knife! I can tell you that next time you half a chicken it will be way more fun with that cleaver!
Love your recipe! Rabbit is a fantastic meat, it can be quite dry so I really like it how you’ve seared it and then braised it in chicken stock... Your finished dish looks really tender and juicy! LOVE it! 😍😋

Great idea of getting a boning knife I agree it’s much easier for butchering and you did a great job butchering a part that rabbit. I grew up on kangaroo and rabbit in Australia, I still find local rabbit here in Florida but I refuse to break into the zoo here to snatch up a kangaroo for dinner lol

The last time I had Rabbit it was terrible, overcooked it was like rubber! This version however, cooked to perfection!!! Sav, your Oven Braised Rabbit with Mushrooms Pancetta and Peas looks wonderful and I just love that creamy sauce YUM!!! Marvelous cooking once again at Lagom Eats!!!
Yes it is super easy to overcook rabbit and it is almost inedible at that point...it's so lean. I think you need to braise it for it to come out juicy! Thank you so much!

Great recipe! I cook a similar rabbit braise, but use bacon vs pancetta and a few other similar subs/tweaks. I’m a big fan of rabbit meat and wished more people understood how great they were for food rather than just being fuzzy bunnies. Also, those restaurant supply store boning knives are where it’s at 👏

We love rabbit! Season has been open about a month but its still a little warm here for my likings. I have gotten some from my local meat guy and they are much larger than the wild cotton tails we have lol and they come cleaned and bird shot free lol. This looks amazing! Great job
I'm sure cleaning them is a bit of a task...but I would actually love to go hunting at least once! I've slaughtered and prepared a chicken before, but it would be fun to hunt!

oh my! i have never tasted rabbit's meat! what kind of meat has the closest similarity to it in terms of the taste! is it chicken? the dish looks really good sav! it's really nice that you can acquire lot's of different kinds of meat in your place and be able to make delicious great dishes!
Yes definitely chicken! However this is a farm raised rabbit NOT wild. Wild rabbit will have a bit of a gamey taste, but this one doesn't! It's very mild. I love how you can get so many different kinds of meats delivered right to your doorstep with D'Artagnan! Most of these I wouldn't be able to find in stores!

Going to have to try this recipe! I have never had rabbit before. I love chicken but it does get old! Do you make rabbit stock?? I've never heard of it or anyone to make it but now I'm curious. Does it taste like chicken stock?
I have never made rabbit stock before, but I made a huge pot of turkey stock after this and I added the rabbit carcass in there as well. Not sure how just rabbit stock would taste, but I'm sure it would be delicious too!
You mention rabbit fat not being tasty?? The flavour of the fat of all animals is directly related to what it's eaten. I pasture my rabbits and the fat has a wonderful taste to it. If you are using a wild rabbit it could have eaten anything but probably wouldn't have any fat at all.
