Oxalate poisoning & dumping: What it looks like, the microbiome myth & why zero carb diets might not work.
With over 30 years in the health and wellness field, Sally K. Norton is a consultant, writer, educator, and speaker who specializes in helping people overcome pain and fatigue by avoiding or limiting plant foods that contain a natural chemical called oxalate.
For over 30 years, she struggled her own seemingly unanswerable health puzzle: “Whywould a person who knows how to build health have so many health difficulties that she cannot overcome?” When she finally discovered the cause and the path out of misery, she committed to teaching and reaching out to others stuck in a similar frustrating situation.
Sally holds a nutrition degree from Cornell University and a Master’s of Public Health degree from the University of North Carolina at Chapel Hill. She worked in the field of Integrative Medicine at UNC Medical School as Project Manager of an NIH-Funded project for expanding medical education to include more awareness of holistic and alternative healing arts. Sally has published popular articles in academic and popular journals, and appeared in numerous interviews (including with Dr. Joseph Mercola) discussing the widespread but little-known harmful effects of oxalates in our food.
Sally has published a cookbook of low-oxalate recipes available on her website, sallyknorton.com. Her book explaining the dire health effects of eating too much oxalate and how to overcome them will be published in December 2022 and is available for pre-order on the link below.

Summary: - Oxalates are compounds that come from oxalic acid and exist as acids or crystals, either soluble or insoluble. - Oxalates can bind to positively charged elements like calcium, magnesium, and iron, forming crystals. - Ingesting excessive oxalates can lead to kidney stones and crystal deposits in various body tissues. - Oxalates are found in certain foods, including dark leafy greens (spinach, chard, beet greens), nuts (almonds, cashews, peanuts), non-gluten grains (buckwheat, quinoa), beans (black beans, white beans), sweet potatoes, chocolate, raspberries, kiwi, star fruit, and more. - Oxalates are associated with inflammation, oxidative stress, and chronic health issues. - Consuming large amounts of vitamin C, including through IV supplementation, can lead to oxalate crystal deposits. - Avoiding high-oxalate foods can help reduce the risk of health problems associated with oxalate accumulation. Oxalates can cause fatigue and brain fog. - High oxalate diet can damage gut and immune system. - Reducing oxalates in food prep is food specific. - Soaking nuts for 24 hours can reduce phytates but increase oxalic acid. - Oxalate crystals irritate gut, don't usually get absorbed into blood. Low oxalate: - Animal foods like meat and liver have low oxalate content. - Low oxalate plant foods include lettuces, cabbage family vegetables, melons, cucumbers, winter squashes, white rice. Symptoms: - Oxalate-related symptoms: arthritis, headaches, skin issues, fungal infections, neural inflammation. - Symptoms can arise during oxalate elimination as body clears stored crystals. - Energy exhaustion during clearing is normal; healing can be a complex process. Cycles of oxalate release can be observed and managed over time. Oxalate poisoning can lead to various symptoms: - Aches, joint pains, and muscle tension - Migraines, headaches, and fibromyalgia-like pain - Sleep disturbances and nighttime arousal - Urinary tract and pelvic issues, including pain - Blood cell problems, like low white blood cell counts - Oxalates can contribute to fibrosis and scar tissue - Oxalic acid interferes with cell functions and signaling - Eliminating high oxalate foods can alleviate symptoms - inclusion of some carbohydrates, such as sweet potatoes, can balance and temporarily reduce the rate of oxalate excretion. - Different individuals respond differently to oxalates, so listen to your body Kidney Stones & Estrogen: - Estrogen is generally protective against kidney stones. - Menopausal women are at higher risk of kidney stone formation when clearing oxalates. Balancing pH and Citric Acid: - Maintaining alkalinity in the body helps prevent kidney stone formation. - Low citric acid levels in urine increase kidney stone risk. - Alkalizing agents like lemon juice, potassium citrate, and mineral baths can help. Research and Support: - Medical research focuses on kidney stone prevention. - Personalized approaches are necessary due to individual variations. - Experiment with different mineral supplements and baths to find what works. Healing and Mitochondria: - Reducing oxalate consumption can support mitochondrial health. - Adequate minerals, vitamins, and hydration are essential for cellular energy. - B-vitamins and minerals like thiamine help improve mitochondrial function. Mineral Bathing: - Mineral baths, like epsom salts and sea salt, can aid in mineral replenishment. - Potassium bicarbonate, baking soda, and boron may be beneficial. - Gradually increasing bath frequency and duration can provide benefits. - Mineral baths can be beneficial, especially for children who may not take supplements. - Applying minerals through the skin can be effective for absorption. Gut health: - Claims of specific bacteria healing the gut and eliminating oxalate issues are often oversimplified. - Gut health is complex, and restoring it to a perfect state is challenging due to the diversity of microorganisms needed. - No single probiotic or bacteria can solve all gut-related problems. - Historical evidence shows that oxalates from foods have caused health issues long before modern lifestyles. - The kidney literature suggests that urine containing 25 milligrams or less of oxalate is considered normal. - Our body produces about 12 milligrams of oxalate daily; dietary intake must stay within that limit. - Good gut health allows absorption of 10-15% of dietary oxalates, making a daily intake of 150-200 milligrams reasonable. - Leaky gut or certain health conditions may reduce tolerance to 50 milligrams of oxalate daily. - Normal oxalate diet is 100-200 milligrams, while many popular foods exceed this limit. - Adjust your oxalate intake based on gut health, avoid overconsumption, and consider consulting for personalized guidance.

After watching all the doctors pushing veganism on tv I became vegan for 12 years. Most of the time I had brain fog, migraines, joint and muscle pain. Doctors could not find anything wrong, even though I was very sick. My whole life was centered around greens,green tea,berries. One day I saw a youtube channel about Oxalates and changing to Carnivore diet, I went carnivore and all bad symptoms went away. Been carnivore now for 4 years and my health is 100% better.

I still have coffee, occasional ice tea, but for my body, meat is the only thing that makes it run right. So,so glad I found out, before veganism killed me. Im sure I would be dead by now had I stayed on that path. It had become a religion of all lifes matter, meaning animal life. I know now that its human lifes that matter first. We should be kind to animals, raise them humainly and kill them humainly. Brain health doctors are saying now that we need 3-4 eggs aday, because our brains run on cholesterol. In the 80s and 90s we were told that egg yokes would kill us and we went stright into a country of Alzheimers. No fat, no cholesterol,nothing to feed the brain.

As a person that has been studying nutrition and the eating trends for decades, I have come to the conclusion that there is really nothing left to eat by the time you remove all of the foods with oxalates, insulin raising foods, foods with parasites, foods that have too much protein, or cause mucus, foods that cause inflammation and/or allergies,....What is a person to do? I have heard that we are frugivores according to our physiology or we are omnivores, or Forks Over Knives is the best, or Keto is the best. We hear don't eat meat because it causes cancer among other things, don't eat fat because it makes you fat, don't eat plant foods because they have enzymes that prevent digestion and then cause issues,...Yikes! I have been studying this stuff for 25 years and I am more confused than I was in the beginning!

I find that the most likely foods to be good for you is the foods we evolved eating. Which works be primarily meat and some plants depending on season. The problem is that most plants are nothing like they used to be, much more starchy and sugary. I'm perfectly fine eating some berries that I find outside on a walk, oxalates or not.

Yea it’s easy to get lost in all the technicalities. If you are stressing about your diet to a high degree then you are already dooming yourself. I think for anyone just removing heavily processed foods is a giant win during these times especially. And then pick foods that you know are healthy whether you get information from science literature or just your intuition alone lol. I’ve removed a majority of wheat from my diet and have noticed dramatically less bloating and that has motivated me to learning. Make dieting a fun thing rather than a stressful situation and you are on the right track. I wrote this mainly for myself btw. I needed to organize my thoughts and your comment helped igniting my inspiration lol. Hope this helps.

@@jenniferbrown3782 They've already said this. The animals know what to eat and when to eat it. We've lost touch because our food in grown for us and shipped to us from who know where and whenever. Hence, it's not seasonal or natural for the temperate zone you may live in. Our ancestors knew how to cure, dry and preserve their harvests to get them through the year until the next growing season. They weren't as ill as we are because they didn't have all these damn toxic drugs and remedies. They knew how to use what was in nature to detox themselves, even it they didn't call it that. Again, we've lost those skills. Go back to nature as much as you are able. Keep learning new skills. Find what works for you. This one size fits all is nonsense.

Sovereign Laboratories creates a product called Colostrum. It is the milk that is not consumed by the new calf after the mother cow gives birth. This first milking has immunoglobulins that can be transferred from one organism to another. This first milking also has growth factors and mends leaky guts! They have a process that encapsulates the colostrum in teeny tiny balls that pass thru the stomach if taken on an empty stomach with water that goes to work in the gut and I think will heal your problem. They have an inexpensive starter bag so anyone can afford to try it. Doctors don’t make money on non prescription cures and might even be controlled or just don’t know so don’t expect that person to give you info about this! Best to look into it yourself! This company is not afraid to say this product fixes that problem! They are direct about that. The FDA has not been able to make them say that they cannot make claims that it cures so they must have undeniable proof and maybe some good lawyers too! I take it and think it’s a great product! Maybe it will help you too!

After the first cycle, my ketosis state and energy came roaring back, looking forward to the next roar! Ms. Norton, your advise is spot on. So, I eat a salad once per month and throw the occasional minced onion or peeled and seeded tomato into my meatballs to try helping my body level out, and the rest of the time I’m follow Dr Berry’s idea of BBBE and I’m healing my autoimmune symptoms and gradually losing the weight. For the people that think we are all nuts, damage to your gut and/or rare genetics can create oxalate problems. Mine started with exposure to a job with aspergillus mold and fiberglass circulating which led to gluten intolerance, which led to oxalate problems after having a doctor put me on stronger and stronger rounds of antibiotics for a fungal sinus infection. I have no doubt in my mind my problems are from oxalates.

Anti-biotics can also be the cause of "Post-Infection IBS'. It can begin up to 12 months afterwards and can take 6-7 years to clear it from the body, a GI consultant from Guy's Hospital wrote. Up to 7 years makes sense when you consider that the body remakes itself every 7 years.

Just this week I had a small pustule on the back of my rib cage, I scratched it open and inside was this tiny, flat, perfect square, translucent crystal. Amazing! Couldn’t get over its sharpness and symmetry! Definitely not a shape you want nor one that is normally found in our bodies! A true weapon. Fast forward to today, zero headaches, zero migraines, insulin is perfect and I am my ideal weight, lost the whole 20kg. Never felt better tbh. I think the key for me is fat content, the body has 2 fuels Fat and carbohydrates, if you are removing carbs you have to increase the fat, whether it be from animals or healthy plant fats like avocado, coconut. If you don’t eat enough fat, you will feel fatigued.

Pim and Sally, thank you both SO much for putting this out in the world. Having just stumbled across this I don't know if it's my answer but I think it could definitely be a piece of the puzzle. I've been diagnosed with MS and body wide peripheral nephropathy which typically don't happen together. Have a kidney stone, a scary cyst and stenosis. Have something terrible going on in my sinuses. Tested positive once for an antibody indicative of granulomatosis with polyangitis so it might be that. Have had connective tissue disease for a long time. Have had a 3 level cervical fusion (that failed to fuse on any level) from degenerative disc disease. Bad arthritis, the eye thing, frequent swelling so bad I don't look like myself. So many systems going haywire that my neurologist and primary aren't sure of the MS diagnosis or how I could be unlucky as to have so many systems malfunctioning all at the same time. I've had most of the symptoms discussed in this. For the first time in a long time I don't feel like a doomed mutant, but like a human who's just discovered a possible path out of this painful territory. I've been hesitant to start any hard core medication/therapy because there hasn't been a definitive answer and I'd rather measure twice and cut once than make a mistake with immunosuppressive drugs. Instead I've been doing alternative therapies, body work, acupuncture. 2 days ago my acupuncturist asked about my nut consumption. Was gluten free for about 3 years. Fell off the wagon and have been trying to get back on. I know I have sensitivities. The thing has been that going gf and using the current substitutes haven't helped me feel any better, worse actually. Been regularly consuming buckwheat, sweet potatoes and all the veggies high in oxalic acid. Now I can see why. I wonder if the granuloma thing could be what Sally is explaining in this. It's nice to have hope. I have to wonder how much the manipulation of our food supply has contributed to oxalates possibly being a more prevalent issue.

I have been passionate about health and diet my whole life but the more you study the more you realize there is no agreement on anything and basically every single food and supplement that you once thought was good is eventually called bad. I could list every single food item now and find something wrong with it according to some. Each food is high in something bad that should be avoided: oxalates, phytates, salicylates, goitrogens, lectins, nightshades, histamine, glutamate, acrylamide, cholesterol, saturated fat, omega 6, high insulin index, gluten, casein, too much iron, parasites, mercury, arsenic, hormones, ....not to mention food allergens and sensitivities that many have. Just choose your poison or starve. There really are no good answers in nutrition the more one studies it.

Free your mind... Now think what our ancestors could eat through millions years of evolution, especially during the ice age... They ate animals. Why? Because 100 000 years ago and even 10000 years ago there was no fruits and vegetables as we have today, because we've selected them not so far ago. Undomesticated fruits and vegetables in the wild nature are small, not too juicy, not very tasty, not bioavailable, hard to digest and seasonal. Try to bake a bread with flour from ancient grains like einkorn and emmer. I guarantee you'll get some issues with digestion. Moreover such bread would be disgusting and stiff like rock, even with yeast. Also check out the ancient corn... It was nothing similar compared to what we have today. So all these plants that we are growing nowadays are quite new to us and frankly speaking artificial. Therefore plants cannot be part of our natural diet. Besides, now we know that plants have oxalates, lectins, fitinic acid and other antinutrients that block nutrient absorption, so you become vitamin deficient. An exception can be bright and tasty berries or fruits that "want" them to be eaten, as they spread their seeds in such way, but it doesn't mean that WE need them to be healthy. Especially when studies show that fructose is not healthy for people.

Totally hear you. My conclusion: A balanced diet, where every food group has its place. No more extremes: No meat, only meat, mostly greens, only fruit, no fruit, etc. That being said, everyone might need different ratios of all the food groups. Best way to find out is rather listen to your own body than going crazy with blood tests: How does digestion, skin, mood, energy, pain, etc. react when I consume more of a certain food item. Might take some work, food diary can be helpful. YES to ALL the foodgroups!

I have suffered with stomach issues all my life. As a child and adult, I became ill when eating pork but until recently, spinach was the vegetable I consumed the most. I also ate raspberries, blackberries, strawberries and though not usually a fan of potatoes, I love crispy french fries and sweet potatoes. I have suffered with acne as a teenager and was left with acne scars and over the past 20 years, suffered with eczema. I have been prescribed everything from antibiotics to clobetosol propionate. In July I was hospitalized and tests showed I had diverticulitis. I was told that I could return to eating normally in a week. I did no return to eating normally in a week and lost 18 pounds in 14 days and another 8 in the past month. I was told I could also follow the FODMAP diet which includes eating some of the same foods that are referenced in this video as high in oxalates. I now eat fresh vegetables but have removed spinach from my diet. No more breads. No more deserts and though processed sugars are contained in so many of the foods we eat, I have stopped buying donuts, cookies, and ice cream. I am also taking B1 with thiamicin, B3, a compound made from the yucca plant, potassium and other supplements. Today, a little more than a month after being released from the hospital I felt much stronger. The itching caused by eczema and triggered from the foods I ate and more recently, from the medicines I was prescribed upon my release, is gradually dissipating. I think this video provides a lot of valuable information though when it comes to following a FODMAP or other diets, it sometimes takes testing how your body reacts to foods.

The information about vitamin C megadoses is fascinating. Vitamin C megadoses never appealed to me, I never saw the point as it didn't seem to prevent colds for me. I never took much C even though it seemed like something benign with only potential benefit, and I heard that the body just eliminates what it can't use. Hearing how vitamin C can interact with the oxalates in the body makes me glad I never took much vitamin C.

I have experienced kidney stones, have autoimmune issues including arthritis plus severe dry eye and dry mouth which has resulted in scraped corneas and sores in mouth from interior of mouth sticking to teeth and me accidentally opening mouth without adequately lubricating the mouth. One thing that has helped has been removing high tannin foods and drinks but hasn't eliminated. While I had reduced spinach (used to love spinach salad with fresh berries 2-3 times per week and spinach in scrambled eggs and in various soups etc) and berries because they contributed to the kidney (and perhaps gallstones) and the gout. While listening to this vid I also did a search for high oxalate foods to see what other foods were high in oxalates looking at multiple sites. While they all agreed with spinach and blueberries, one site would include, for instance, blackberries, celery and kale as high oxalate foods and other sites include those as low oxalate foods. There doesn't seem to be any agreement. You also suggest lemon juice as beneficial but lemon is another thing that I have identified as something that exasperates the dry mouth/eyes) How on earth can someone determine whether to follow your advice or to listen to the next professing expert on the subject? And what is it about oxalates that is resulting in so much conflicting information?

This is new to me except that my friend had told me about the thin film on spinach leaves that causes kidney stones. He had told me raw spinach causes that. He had told me to always cook spinach because cooking breaks down the film and then I would be okay. I am amazed to hear that foods I also eat like black beans and chocolate also are now on the bad foods to eat list! Maybe cooking the beans also helps to break it down? I’m not going to eat them straight from the can anymore just in case. I have never experienced a problem that I know of from oxalates but prevention seems to be the key so thank you for your knowledge!

Pim, I really enjoy your method of interviewing. You listen well and ask pertinent questions. I recently started my 95/5 carnivore diet and am having a rough go of it. Thank you, I appreciate that! ❤ You bounce back while remaining close to 0 carb throughout? If you do, that's interesting. Even if I have blueberries 3 times per week I get the headaches and fatigue (it's probably just 15g of carbs each day or so). I really seem to need that 1 temporary top up to get back, it's strange.
@tallcedars2310
@tallcedars2310 Год назад
@@RadicalFoodFreedom Hi Pim, I do bounce back to some degree of energy but its not much. The mind clears up and doing things is not a chore, only it doesn't last long. It's more of a sugar spike that fades after a couple of hours really. Sounds like headache/sleeping are your warning sign, with me it's fatigue for a day or two where everything shuts down; mind, muscle and spirit. I shuffle around not able to focus on anything, not eating but drinking tea and water until I feel like eating, then I nap for an hour or so and feel "refreshed" to some degree. But sorry if I mislead you with my post. My energy is no where near functioning to capacity but will mush onward and see what happens. All the best with your recovery Pim!

just want to say that I started tracking my daily food intake with associated symptoms...with me, my main symptom was post nasal drip, and sometimes hoarsness. Another symptom I've had for years has been vertical nail ridges. I started learning about oxylates, then salicylates, and histamines. Long story short is that I now am aware of the foods that are considered "high"...and knowing them, I can limit clustering those foods in one day. I rarely have the postnasal drip and I think my nail ridges look less pronounced.

Oh, good...radishes are low - you can cook those like cottage fries [potatoes] or grated and cooked like hashbrowns - they're supposed to be delish. I went off Keto and just concentrated on 'no-to-low oxalate' foods for a month and dropped 11 pounds - I'm guessing of inflammation. And my fasting blood sugar number was the lowest I've had ever. Thank you. I tried joining a carnivore group. My first question was how do I slow this oxalate release? They said it’s noise they do not want to hear, they ignore noise. I kept tea & a tiny amount of Hu milk chocolate. Then I did epsom salt foot baths. It took a few days & oxalates came out fast. Adding more plants wasn’t slowing this oxalate release, it made it worse. After my flank pain I understood I did it too fast. When you start be careful of over eating Carnivore groups. They have carb addictions, and are like an AA group. They preach abstinence. I know slow is better, work up to 0 carb.
