Caribbean people clean their meat too and we use lemon or lime to cut the "freshness". But we season our meats overnight in herbs (chive, garlic ,onion,thyme etc) and then scrape the herbs off before caramelizing the meat in brown sugar. Ketchup in stew is our norm. Have a clear sink and counter-top before you begin cleaning the meat/poultry and then thoroughly clean and sanitize the area when you are finished.
Please to specific which island Jamaican do not use chive, brown sugar is a new thing. Ketchup also new. Clean is to cut rawness not freshness, different island definitely not 🇯🇲🇯🇲🇯🇲🇯🇲🇯🇲. Bless

So apparently in the culinary world they don't think it makes a difference whether or not you clean the meat the germs get killing during the cooking process. I don't care what no body says I rinse the meat before I cook.

There's no need to clean meat. It's just an old wives thing. Especially if your braising meat or cooking in a pressure cooker. And this is coming from a professional chef. And plus it's not blood, it's myoglobin.

Made the oxtail style beef neck bones on Sunday, it was a very successful venture! I've never made oxtail before and the price was a deterrent too but these were relatively cheap and also delicious

My mom used to put beef neckbones in her pasta sauce. It would cook all day! And then we would munch on the bones! Love it and definitely gonna try this. I wish I could try the shrimp but I’ve developed an allergy unfortunately. Which stinks because I love shrimp!

Girll completely agree. We in the Caribbean clean our meat. The places these meat be and how they be cut and prepared we don’t know. It could have been dropped, sneeze on etc. clean with water and salt, vinegar or lime. Just clean out your sink with bleach and dish liquid and you good. Doing the “cleaning” also help draw out blood. We been doing it for years.
