Brut rice is one of the most typical dishes of Majorcan cuisine.
A soupy and spicy rice that combines free-range meat, game meat and seasonal vegetables.
The literal translation of Brut Rice is Dirty Rice, named after the color of the broth, which acquires this dark hue thanks to the mixture of game meats and spices.
Ingredients for a Brut rice for 8 - 10 people. (if any type of meat fails you, you can omit it)
- 400-500 grams of low rib of pork
- Half free-range chicken (hindquarters)
- Half rabbit (can be replaced by Duck)
- 2 Quail (can be replaced by half a pigeon)
- Several Thrushes or Thrushes (they give a spectacular flavor to the broth)
(can be replaced by another game bird)
- 1 or 2 rabbit livers
- 1 large onion
- 2 large ripe tomatoes
- Half a red bell pepper
- 2 cloves of garlic
- Chopped parsley to taste
- Sobrassada de Mallorca (a piece) (if you don't have sobrassada, you can omit it)
- 200- 250 grams of seasonal vegetables (peas, green beans, artichokes...)
- 150-200 grams of esclatasangs or Niscalos (rovellons, mushrooms) (mushrooms or other seasonal mushrooms could also be added)
- A good handful of cooked snails, with their broth (optional, but recommended)
- 1 teaspoon of sweet paprika
- Salt to taste
- ground black pepper to taste
- 1 liter of water approx
- 4 liters of chicken broth approx
- Mixture of spices (black pepper, allspice, cloves, nutmeg and cinnamon) In variable proportions according to your taste. I like that cinnamon and black pepper predominate.
In Mallorca it is easy to find a preparation for brut rice that incorporates all the spices. (Spices Crespí is one of the most used and well-known)
- A handful of rice per person (bomb type or round rice)
