General Recipe Tips:
✔ A thermometer is highly recommended for accuracy.
✔ Use at least a 3 quart sauce pan to avoid sugar spattering onto the stovetop.
✔ Avoid non stick cookware when cooking to high temperatures or making syrups, candies and fudges as it is more prone to cause crystallization.
✔ Avoid cooking on electric glass stove tops, especially ones that are not induction like mine. Hot syrup that hits a hot burner can pit or permanently etch glass.
✔ Cook until syrup reads between 220°-230°F (104°-110°C.) Above or below this and the syrup will not have a good consistency. For the ideal syrup, we recommend cooking the syrup to 225°F (107°C.)
