Pancharatna khichdi
Wash, soak for 1 hour in water
1.25 cups of rice
1/4 cup each of toor dal, masoor dal, chana dal, moong dal and urad dal
Transfer rice and lentils to a cooker after draining off the water
Add 1 tsp turmeric powder and salt
Add 8 cups water
Close the cooker and allow 3 whistles on a medium flame
After the pressure is gone, open the cooker
Heat 1/4 cup ghee
Add 1 tsp cumin seeds, 1.5 tbsp sliced ginger, 2 tbsp Green chillies, 1/4 tsp asafoetida and curry leaves
Stir 30 seconds and switch off the flame
Add tempering to the khichdi
Add 2 cups hot water
Cook for 3 minutes on a medium flame, stirring constantly
Switch off the flame
Add a few roasted peanuts (optional)
Serve yummy khichdi with raita or salan or any curry
