PANTRY MEAL | Rachel's White Chicken Chili & Cornbread

This Recipe is so quick and easy anyone can make it and feel like your eating better than any restaurant meal. White Chicken Chili from pantry prepared items is one of my favorites to make.
There are plenty of variations to this recipe, but in order for me to make from ingredients I have prepared below is my recipe:
Chili Ingredients:
2 pints of northern beans (drained and rinsed)
3 pints of canned chicken (drained reserve liquid)
2 cups chicken broth (reserve liquid from canned chicken, Additional chicken broth if needed)
1 4oz jar of cowboy candy
2 tsp cumin
2 tsp coriander
2 tsp oregano
3 cloves garlic minced
salt and pepper to taste
1/2 cup evaporated milk or heavy cream
2 tablespoons tapioca powder (cornstarch or arrowroot powder)
1/4 cup chopped cilantro
lime wedges/lime juice
Directions: Add first 8 ingredients, combine well breaking up chicken pieces bring to boil and reduce to simmer, simmer covered for 45 mins to 1hr 30 mins. During last 10 mins mix tapioca powder to milk and stir into chili, add cilantro and continue to simmer uncovered.
Cornbread Recipe:
1 cup buttermilk (to make your own 1tbsp vinegar fill with whole milk up to 1 cup and let sit 5-10 mins)
1 cup cornmeal
1/2 cup flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
6 tablespoons lard/shortening melted
1 egg
Set oven to 450F, Melt oil in cast iron skillet in oven while oven preheats. Mix egg and buttermilk together, stir in dry ingredients, pour in melted oil and stir to combine. Pour into oiled cast iron skillet and bake 20-25 mins.

A tip on the buttermilk! I love using buttermilk for homemade ranch dressing, but its just me so I only need a little. Buttermilk freezes extremely well! I measure 8oz into a pint jar so there is room to expand and pop them in the freezer. Place them in the fridge the night before you need them and shake super well. Works like a charm.

You and I seem to have the same cornbread recipe and method of baking! 😍 My daddy (he'd been 72 this year) taught me how to make it when I was young, and I now own the cast iron skillet his mama use to make it in, that he taught me how to make it in ❤️❤️

Not really, the recipe called for heavy cream and masa, I had neither so I used evaporated milk and tapioca flour

I add a gulp of oil and about 1/4 cup of honey to my cornbread. It makes it so moist and yummy. My better half loves cornbread and he absolutely loves it lol

I know this is an older video so you might not see this but I watched this yesterday and I had canned some white chicken chili so I heated a jar up and made up some corn muffins for dinner. I ended up adding a can of chicken to make mine look as yummy as yours. Lesson I learned: Be like Rachel and can everything up separately! I add coconut milk because my partner can't have dairy. It was still SO good. Thanks for the inspiration...we had a great, cozy, Fall dinner. He even took the leftovers for lunch today!

Good idea on the buttermilk! My grandmother always had a carton of buttermilk in her refrigerator. I always had a glass of it when I visited as a child. Soup looks yummy.

Try adding a jar of that cowboy candy to your cornbread next time. I make corn pudding for Thanksgiving every year and add chiles, creamed corn and shredded cheddar to it. It is such a hit. I bet this would be great with cowboy candy in place of the chiles.

Hey, Rachel, this looks yummy! Did you know you can buy dry buttermilk? I always have it on hand, keep it in the fridge, just add it to the drys in the recipe and add water to the wets. Easy peasy! But your way is easy too.

yum i am making this for sure. I always keep lots of canned milk (evaporated) on the shelf in my cold room for moments like this. Maybe tomorrow night for dinner.

This would also be a great in the crockpot too. Start it out on low for four or five hours and then the last hour of cooking turn it up to high to add the cream mixture to it. Yummy 😋

You can add one cup of corn to cornbread batter. After you take it out of oven, poke holes in top. Put some butter on it and honey to melt in then sprinkle some chili powder on top. Just another twist on cornbread

Your white chicken chili looks delicious! I wrote it down and will be trying it out this winter! I use either powdered buttermilk or I do the vinegar and milk which both work great. Another option for those who don't like evaporated milk (I don't) I read somewhere that you can replace heavy cream by adding melted butter to your milk but I can't remember the measurements off hand.

Love your recipe on chili but I would have to leave out the thickening paste. Absolutely hate thick soups and stews but can’t wait to try otherwise. I am from Georgia and you are spot on with your recipe on cornbread.

Looks yummy Rachel! I like the cream you added at the end. The recipe I use is pretty similar but doesn't use cream and I think that is what is missing from it. I'm going to try it the next time I make it! A revelation to me was finding powdered cream! Who knew all these dairy products were available in shelf stable powders? I did get some for my pantry because for some reason I use a lot of cream and don't get to the store as often in the era of covid :) Thanks!!

That looked amazing. I will have to send you the creamy white chicken chili with salsa verde recipe that I have, to try! It is phenomenal! Hands down, the best white chicken chili I have had. And if you guys can grow your own tomatillos over there, I can also give you an authentic recipe for salsa verde that is legit! My friend’s wife is from Mexico and she shared it. I will never go back to store bought!

Just like regular chili, there are many variations for white chicken chili. My mom's is a milk, sour cream base (delicious), mine has a salsa verde base ( so yummy) and yours is stock and cream ( which looks devine). Will definitely give this a try.

I put off watching this video for years...because I wasn't up to what surely was so much typing/screen back and forth from video to file. Thank you so much for the copy paste! Whew. lol Looks good! Have to give this a try some time in the next few months. Once the cilantro stops being scared of the heat, and grows! We always have butter milk, because I bought one years ago. Anytime the milk is getting close to old, and we have new milk, I just add a cup per quart of the current buttermilk to the new/old milk. Keeps the milk, and I can quickly get baking powder biscuits done. (Technically I just do a dough blob with the biscuit recipe, so kind of a round bread, that we eat in cornbread shaped wedges.)

Watching this vlog this 20* morning in Ohio and I am thinking of all those families that have no power or water.....I imagine there will be more viewers watching prepper how tos..... I know our little propane camp stove came in handy so many times when our power went out.....I’ve even came up with taking a mason jar and putting a funnel with a coffee filter in it and poured hot water thru it for our much needed morning coffee.

If you don't want to add sugar to your cornbread for sweetness, you can add a bit of cinnamon. Works like a charm.

You can order buttermilk powder on Amazon. Walmart has it too but it’s much cheaper on Amazon.

It’s a vintage kitchen tool called a Pry-a-lid. You can sometimes find them in antique stores or on eBay, but they’re expensive.

It's called a pry-a-lid. No longer made but can sometimes be found in line or at an antique or thrift store.

I never even keep milk in the fridge. If i need buttermilk.... i make a cup of power milk (from the pantry) and add a Tb of vinegar. Close enough for jazz.

Whole foods and portion control. I follow intermittent fasting (18:6) and farm chores is about the only exercise I do, I should do more
