AMAZING GREEN TOMATO KETCHUP | Water-bath Canning Recipe

There are endless uses for those green tomatoes so don't throw them out! This ketchup recipe is a bit on the spicy side but completely delicious! I think we will use it both as a ketchup and BBQ sauce replacement, maybe just adding a bit of liquid smoke for BBQ sauce. I encourage you to look at everything you buy from your grocery and figure out how to make it at home, after all homemade is best!
Recipe:
6 lb chopped green tomatoes (cored, not peeled)
3 lb onions chopped
2 cups white distilled pickling vinegar
2 Tablespoons minced garlic
1/2 cup honey
1/2 cup brown sugar
1.5 tsp black pepper
.5 tsp chili powder
.5 tsp cloves
1 tsp dry mustard powder
salt to taste
2 cans of tomato paste (optional)
Mix all ingredients, cook down until softened thoroughly, puree well, continue to cook down until desired consistency is reached and water no longer pools around spoon drop on plate, fill jars to 1/2 inch headspace, process in waterbath canner 15 mins.

My family has been making green ketchup for years but I have never seen it done this way. Then again, all regions use up their fall crops in different ways. We chop the tomatoes in small dice, using the onion chopper and we do not strain it. We also add a bouquet garni of pickling spice that we remove in the end. End product is a chunky ketchup, more like a chutney and it is green in the end. I like yr recipe. Perhaps if you have many green tomatoes left, you could chop, dehydrate and grind and use powder as a thickener instead of tomato paste for next year to use up the produce and also keep the color. Would be one less store product to buy. Loved the Worcestershirebsauce addition for taste.

I really do appreciate how real you are! I am a teacher but we have started to “homestead”. We normally do it on the weekends and now that it’s harvest season (in New Zealand) I have been doing a recipe of canning in the evenings. I love your quick canning recipes. Thank you Rachel!!

When I made ketchup I blended the heck out of the seeds and skins then added them back to the sauce. It thickened it without changing the flavor. Just something that worked for me. Can't wait to try this recipe with green tomatoes!

I also didn’t strain out the skin, etc. didn’t need to add tomato paste and it thickened right up.

Love this recipe, My Toddler likes it too. We got our tomatoes in too late in the ground so all we had was green tomatoes. This is definitely a new staple in our home. Thank you so much for the wonderful way to take care of our green tomatoes this year.

I’m watching this video as I eat pickled green tomato wedges we picked up last summer at the farm market with some hardboiled eggs topped with Sriracha. Love finding fun new ways to preserve and use green tomatoes!

My first batch is in the canner. Just tweaked the recipe to give it a less of a spice profile. My husband did not want me to make this. Before I jarred it up, I made him try it and he is now excited and can’t wait for me to make a meatloaf to use this as a topper.

My mother in law and I always made green tomato what she called mincemeat, no meat thou.....green tomatoes with equal amount of apples and made into a apple pie filling....we would take a cookie sheet and make one pie crust to cover the bottom them put the filling in and cover with another crust. Put slits on top and brush with milk and sprinkle with sugar and cinnamon.....so good..there are exact recipes on you tube....tastes like apple pie filling.....

I just made this and sampled before I canned it up and it is very good! I did add a splash of the worcestershire sauce. I had about 15 gal of green tomatoes so this was very helpful to have a variety of recipes. Thank you!

Onions always really get to me too! This year I tried putting a small fan next to me blowing diagonally away. This was a huge help, almost no tears!!!

Thank you! Going to give this a try later this week. It's just sad how the only think most people can think of for green tomatoes is to fry em. I was so happy to see this recipe. We got about 50 lbs of green tomatoes to processes due to a early frost this year.

For my veggie paring freezer bag: at the end of season, I bought 8 field grown basil bushes, yes, they were easily 2’x 2’ bushes. After removing leaves and soft stems for pesto, I put the tough stems in my (already in use) dehydrator. After dried I added to my freezer veggie paring ziplock. I think drying before freezing they didn’t turn black then mushy. Did the same for my Summer Savory stalks. They added a wonderful flavor to the gallons of veggie stock I made in advance of turkey brining for holidays.

I can't imagine it not being good. I make green tomato chutney and i love it. And since homemade ketchup is somewhat similar in flavors...i bet it will be nummy. Yes I have a drawer just like yours !! I received my 20 quart Roaster Oven today, and I can't wait to use it. Rachel I have Never Heard Of green tomato catsup. so I am watching you this very minute. LOL Hi Todd, how are you ? you guy's work so long and hard, and Believe me, I have Learned so much. I Loved the Farmers Market you go too, they have everything, and just so Beautiful. Finally you have a green tomatoes ketchup! It my husband favorite, I have a lot ++ of green tomatoes and in Montreal the night are around 40’F and day a little better! So, they will never become red!! So, I will try your recipe and give you news. Thanks from my husband!

Congratulations on the promotion Rachel! Love Grove esp their all purpose cleaner. Yes, I have a drawer like that too and it is so hard finding anything in it, lol. Great job! I think the chili powder you added was what turned it to a reddish color instead of the traditional green color. So glad it turned out to your liking and will be less you have to buy at the store. I canned bacon yesterday as well as Asparagus and Onion Jam. I'm resting today, ha!

Oh my goodness....I already made 2 batches of ketchup but now I have to try this too! Looks so yummy! Rachel I had a funnel just like yours...then one day I decided NO MORE, I got myself a stainless steel one and it is AWESOME!!! I believe whether u can or not every single kitchen needs a stainless steel funnel that size! I use my at least once a day when I am home all day! I only store leftovers in mason jars ( 1/2 qt wide mouth jars r perfect) so that funnel makes quick work of it. Thanks again!!

Everyone should have a junk drawer because if you don’t have one then every drawer you have will become junky. Green ketchup sounds interesting! Have you ever tried processing whole grain mustard? I’ve got lots of brown and yellow mustard seeds to use. Love all your videos, you and Todd are a special couple.

We always had a junk drawer growing up. Then we built, and I had no drawers at all in my kitchen. Yeah no drawers. Until, a couple years ago I decided to take out my bar area and put in an antique buffet for an island. It had two drawers and two doors. Finally have a place to keep silverware, knives, etc.

If you are talking about canning mustard, it usually lasts a year in the frig from scratch so it probably isn't necessary. Making mustard is easy. I made dijon but it's really straightforward, you will need mustard powder though.

I made ketchup out of cherry tomatoes and it took me 24 hours as well. It's a process but you get a lot in the end and it's so good!

Hey Rachael, tell Todd a little bit of salt and a drop of water in cast iron will free debris or get rid of stuck-on grease for a cast iron. Be careful not to scrub too hard so that you don't scrub off the treatment that has built up.

My tomatoes are cooking in the crockpot now. The house smells so good. I don't have an immersion blender so will just use regular blender or beater when the time comes. Also, I don't have a food strainer...suggestions? I'm also making yogurt and coffee creamer today :0) Thanks for squeezing in another inspiring video!

I've never made green ketchup but have pondered the idea of it. I do make green pasta sauce though and it is amazing! If you are looking to get away from store-bought items, America Test Kitchens' DIY cookbook has an amazing recipe for Worchestershire sauce. I've made it for years now and refuse to buy storebought again!

@@tional5266 my parents where both born and raised in Quebec and moved to the Adirondack Mountains in the 50’s. We had some traditions at Christmas. We would have meat pies and would have them with the green tomato catchup. We had a large family.

You can make homemade red ketchup (catsup or however you see it spelled depending on the year of your cookbook) with much less sugar. My mom used to make green tomato relish I was too young so I can't say yeah or nay. But the Townsend's channel has a colonial recipe for mushroom catsup, and I've heard of it made of onions (probably the basis of Worcestershire sauce).

You made me laugh out loud when you were crying!! Sorry I find the garden onions so strong too. I make the french Canadian one because I am french Canadian, only I'm from Alberta. Would you believe my mom used to make it all the time growing up but I was such a fussy kid that I never tried it because it looked gross. Then I had it as an adult and thought to myself I missed out all those years. My aunt also made me a green tomato cake one time with raisins and candied cherries it was so good.

Those dishcloths are like what we used to use at the dairy to wash udders! They were so good at cleaning, we bought more for the house, and cut them into quarters.

In your next canning video, would love for you to mention any experience you have using Tattler lids. I know you’re hoping to be as sustainable as possible in your homesteading endeavors, as am I. And those darned, standard single-use canning lids are such a bummer in home canning. I’ve just started using Tattler lids, and I like them fairly well.

Worcestershire - Sounds like 'Wuss-ter-sha' (or shur) There's an awful lot of letters compared to how it's pronounced ;) The ketchup looks great! Had no idea you could make it from green tomatoes, might have to give this a go as I've got plenty that won't ripen before the cold gets them.

Talk of cast iron and Grove scrubber. They have a coconut scrubber pad. White not brown. Fantastic scrubber.

That drawer!! Oh yes and the searching! 😂 I love to order from Grove but never have ordered the carpet fresh. I’m going to account and putting it on order now!! I just had someone call me to see if I could use green tomatoes! Of course I can now!! Do you think it would be ok to freeze the tomatoes then make it later? Would adding xanthum gun help in the thickning process if you didn’t want to add the paste? I’m looking forward to trying it. Those spices sound so good!
