Lol reading all these english comments talking about how rare and expensive parmigiano is feels pretty strange as an Italian who lives in the area where the cheese is produced. Here it is actually pretty cheap and sometimes you will get a parmigiano knife for free (i have like 15 lol)

this might be a meme, but i'll explain it anyway. The knife has to only be straight in two axis, not all of them. It is forming a 90 degree angle with the flat cheese, therefore there is no problem in it being tilted a little bit inwards depthwise
