The max numbers do not really define what the motor is really doing at peak speeds. The max amps is spike current, the max rpm happens when the prop slips or if you were revving full throttle unloaded. To get a better understanding of the motor's performance, you would need to move the morse at different points on the graph. Example moves the morse at at spot where you are at 100 percent power out. Then check the numbers at that point. So you really want the numbers that is shown at morse. Typically when you squeeze full throttle the prop would slip a bit, you might see a high rpm number, shortly after the prop would hook up and the spike amps would occur, rpm would fall off, next the boat would accelerate to peak speed, the amps would drop a little and the rpm would increase a little from the rpm at peak amps. This method will help you get a better picture of the motor's true performance.

What " is " ripple " ?

Voltage ripple is when you go from 100% to 0% throttle and voltage to the motor stops. This is a voltage spike. Like turning off the faucet in your bathroom. The sudden stop of water. This is the same too voltage. This is important as if the batteries are weaker or a system that has a high-powered demand and the system can supply enough power. The Ripple will be more. Here is an article that might explain a little little bit better in detail www.radiocontrolinfo.com/ripple-voltage-in-an-esc-explained-and-how-to-improve-it/
