The reason they're called funeral potatoes is people often bring them to families in mourning. It's traditional to bring food so the family has one less thing to worry about.
I recently made these and I added bacon and chives. I didn't have the chicken soup but I did have cheese soup. They tasted so good. My family asked me to make it again soon
Make this you’ll love it Smoked sausage cut n bite sized chunks 1 green bell pepper chopped 1 red bell pepper chopped 1 med onion diced 1/2 tbl garlic powder 1/4 tsp pepper 4 potatoes diced Put all in pot bake 350 for hour covered Drain off all liquid Add 1 1/2 tablespoons bbq sauce 3 tbls brown sugar Mix put back in oven for half hour uncovered You can also fry it all in a skillet the oven is easiest
