Pasta fazool, or pasta e fagioli, is a healthy and inexpensive peasant dish. You can have this one-pot meal that packs lots of flavor and goodness on your table in less than an hour.
Pasta e fagioli is made all over Italy and varies from region to region. One big difference is that mine has no meat. Up north they usually add pancetta to the aromatics as the base of the soup. Some people like to add tomato puree. Some people don't add tomato, they like a white pasta fazool.
Mine has a light pink hue. I use a little tomato puree. Make it any way you like it, just don't make it the way they do at Olive Garden.
The creamy beans and pasta are bathed in a savory light broth enhanced by the sharpness of the pecorino and the mellow olive oil. Pasta fazool will warm you and fill you up. Make extra so you can eat it again the next day.

Well, that's one way to make it and I'm going to try it. My mother was from Caserta and she made hers with a thicker tomato base and beans and pasta; She used to say every village in Italy has a different version.

Ciao. You Mom is right. My Mom was born in a town near Avellino about 30 kilometers further inland from Caserta. I've been to Caserta and many other small towns in that area of Campania. The same dish in towns very close to each other can be very different from one another. Even among my Italian-American friends there's a debate about red or white pasta fazool. I split the difference with some tomato for a light pink pasta & beans. Make it anyway you want just keep this peasant dish simple.

Gianni North Beach A Friend of mine's mother used to make a white one with garbanzo beans (chichi beans) and it had a hint of tomato in it. I would love to find out how to make it. It was very thick because she boiled the pasta (ditali) in it until the water evaporated. Mangia Bene!

I like the recipe but my grandma from Tuscan used more tomatoes. She would also add ground beef while heating the veggies or pancetta. Otherwise it was the same and it was awesome. Thanks for bringing me back to this. Going to make it on Sunday.

i absolutely love pasta fagioli, my mum makes the best and yours is nice too.by the way my family all live in england now but originally from a little town near avellino called prata.i have not been to an italian restaurant yet which can cook like my mum.great videos and keep them coming gianni.

Beautiful! I Make this very similar except I brown about a 1/4 pound of chopped pancetta prior to putting in the onions and celery. That's just how my grandmother Rita did it so I do it too. She was from Genoa. Is there anything better than an Italian mother or grandmother?

Hi, I make this all the time and I do cook it separate to keep the pasta firm. I add V8 juice which gives a nice flavor since I had no tomato. You mentioned your family was from Avelino, where my Grandmother was from, A small town, Grottaminardo.

My mother's family was from Mirabella Eclano very close to your Grandmother's town. Small world. I've visited Mirabella and the surrounding area several times. It's a beautiful area in the Appenine foothills.

Ah, now we're off in a new direction. I only add some passato mostly for color with just a hint of tomato flavor. I'm all in. Next fazool is with anchovy and San Marzano tomatoes! Keep on cooking. --Gianni

@@GianniNorthBeachTV Gianni, since we are talking about variations around your delicious recipe, take half the beans and half the tomatoes and parsley and stick blend it before adding back to the pot.

If you use dry beans, DO NOT add salt untill the beans are tender. Other wise the beans will be tough as shoe leather. I grew up on this. It freezes nicely, just don't add the macaroni to the soup if you are going to freeze it.

if you're using tomato puree in the soup, couldn't you also use tomato paste and some mashed fresh tomatoes?

Ciao Geoffrey. All is well. Thanks for asking. I've been doing a lot of travel for my day job and enjoying some vacation time too. We haven't shot any new episodes in a while. My producers at Hungry Village are real busy and are weary of doing my cooking episodes without compensation. If we find a way to monetize the channel we'll be back. it seems to me that butter is not used very much in Italian cooking. Can anyone tell me why?

Southern Italy is a Mediterranean climate more suitable for growing olives than herding cows needed to produce the butter. Plus it's lighter and more healthy

Gianni, Really enjoy your videos, and I am learning a lot. In this pasta fazool video you spoke of your 100 year old French red wine vinegar. You said that you pour in left over wine to add to your mother. I have been told that if you use off the shelf wine, which contains sulfites, the sulfites will kill off the mother in your vinegar. My dad used to do that in 50 gallon barrels and after a few years the 80 year vinegar base had turned to colored water. I make my own vinegar also, but I use untreated grape juice which I get from a friend in Santa Rosa. The sulfites stop the natural chemical process the grapes undergo, and eventually stops the mother too. The wineries use the sulfites in order to get maintain a consistent flavor of the wine, or vinegar. I hope you can salvage your vinegar.
