In the Naples area most cooks use dried pasta and Pasta con La Genovese, is a classic dish from the area. It involves loads of onions and some beef, and the key is long slow stewing. Although it takes a while, it's dead easy and is absolutely delicious. Anna Maria shows us the recipe. We hired an AirB&B apartment and it turned out our host's mum, Anna Maria, is a Pasta Granny - we had to film her.

I often make Geneovese but I cook it at least 4/5 hrs. That’s the key for a delicious Genovese - slow cooking on a very low flame.

Yes, the longer cooking time the better. Gas is quite expensive in Italy, so I think 4 or 5 hours would make most cooks wince a bit and find a wood burning stove! 😊 best wishes, Vicky

Wow! I never knew anyone else ate this but my family. I always thought it was weird to have pasta with a brown sauce and figured it was one of my mother’s creations!

Same here..my mother is from Naples...I've been eating and making this sauce for years..I didn't think anyone even knew what this sauce was until I saw this video...It's so delicious!!

My Family is from Naples our version includes celery carrots and onion and parsley and a few pommodoro pelati so good

Just look for "sugo alla genovese" recipes and make it. Is maybe the finest pasta recipe of all. Alas, there are many versions of it (as always) but the most important thing is the onion: 1 big onion for each person. Starting with that, you can't fail.

This is our best pasta recipe. When my cousins come from US they literally eat kgs of it. Most important is the onion: my mom uses 1 medium onion for each person.

I would probably brown the meat first. No mention of how long to braise it for? I guess I can find that by looking at other braised beef dishes.

Vicky, great recipe, looks delicious. We have a similar recipe here in Kentucky, braised beef shanks cooked low & slow til tender( inexpensive cut of meat here), day old bread, & stewed tomatoes, however we eat ours all together in a bowl, meat, tomatoes, bread diced up, God bless everyone. p.s. our stewed tomatoes are sweetened with a little sugar, are the stewed tomatoes used in Italy sweet or sweetened ?, just curious

hi Steve, I've never seen anyone add sugar to their stewed tomatoes in Italy. Partly because they haven't travelled very far and are therefore riper, but also Italians maintain long slow cooking brings out the sweetness of the tomatoes. best wishes, Vicky

Sugar isn't used in cooking Italian dishes. Even Italian desserts don't use as much sugar as other countries.

This should be thick flank, which is a part of the leg of the beef. No tomatoes in the Genovese, otherwise it would be called ragù napoletano...
