Sea urchin AKA uni is a delicacy. Whenever I see at the market, I don't care how much it cost I got to buy it. It is usually eaten raw, but how about making into a sauce and serve with pasta. This dish is creamy and so scrumptious. You can use spaghetti, angel hair or any type of pasta you like. Here are the ingredients you will need...
INGREDIENTS:
UNI SAUCE
12-16 whole sea urchins, reserved 2 for presentation
1 tablespoon olive oil
2 tablespoons, shallot, chopped
1/2 cup white wine
1 cup chicken stock
1/4 cup heavy cream
1/4 cup butter, cut into small chunks
salt and black pepper to taste
SPAGHETTI
1 pound spaghetti or any other pasta you like
1 tablespoon salt to cook the pasta
1 tablespoon olive oil
2 garlic, minced
salt and black pepper to taste
OTHERS
2 tablespoons Ikura (Salmon roes)
nori (seaweeds), cut into small strips
Chili threads
edible flowers
1 teaspoon ground soy lecithin

Looks amazing. Going to take advantage of the winter Uni season where I am and try and treat myself and make this. Can I ask how essential is the soy lecithin and hand blender final step? Is it mostly to froth up the sauce for textural variance and aesthetic? If I were to just use the remaining sauce as is and pour it around the pasta would the recipe still work well?

Wow, not only looks very tasty but looks very beautiful. Thanks! How long does the foam in the sauce hold. I plan to cook this dish for 50 people. Any recommendation how I should do the foam sauce at the end?

Lecithin hold the sauce foam longer. You can certainly skip it. :)

+jason choi I believe these uni are from British Columbia. Not sure which type. But you can use any kind of sea urchin for this dish.

+CookingWithMamaMui ah, I see. Yea we have Santa Barbara uni here but none look as rich as the one you have in this video. And Hokkaido uni is too expensive and I feel it's it's a waste to make it into a sauce. Anyway thank you!!!!
