► INGREDIENTS
FOR MOKA'S CAKE
• 3 eggs at room temperature
• 180 g of unsalted butter at room temperature (3/4 cup)
• 460 grams of regular sugar (2 cups)
• 2 tablespoons of vanilla
• ¾ cup of milk at room temperature
• 1 cup of coffee (I use a cup of hot water and two tablespoons of instant coffee)
• 320 gr of all-purpose wheat flour (2 ¼ cups)
• 1 teaspoon baking powder
• 1 teaspoon of baking soda
• 100 gr of cocoa without sugar (1 cup)
• 1 teaspoon salt
FOR THE FROSTING OF MOKA
• 225 grams of unsalted butter at room temperature (2 ½ bars of 90 gr)
• ¼ cup of whipping cream (60 ml)
• ¼ cup of coffee loaded (I use ¼ cup of hot water and a spoonful of soluble coffee)
• 2 teaspoons of cocoa without sugar
• 1 teaspoon vanilla
• ¼ teaspoon of salt
• 2.5 cups of icing sugar
FOR THE GANACHE (OPTIONAL)
• 1 cup of chocolate semiamargo
• 1 cup of whipping cream
