Pasty anyone? How I make a traditional Cornish Pasty

I can trace my Cornish family back to the 17th century, with miners, farmers, bakers and esquires being among my ancestors. Andrew's family has a long tradition of mining in Cornwall too.
I used to make pasties with my Mum's Mum, or my Nanny as I used to call her. She chose 'Nanny' because she thought 'Grandma' made her sound old! My Mum also makes pasties in the same way that her Mum did.
In today's video, we share my family's method of making a traditional Cornish pasty. You will hear of variations of the recipe that have been passed down through different families and this video is not meant to be a categorical method, just how our family makes a pasty.
Ingredients Makes 8 medium sized pasties (approximately!)
For the pastry:
20oz strong white bread flour
10oz margarine
some water, about half a cup
For the video I made two batches of pastry
For the pasty:
1lb beef skirt
4 large potatoes, cut irregularly
1 small turnip, cut irregularly
1 medium onion, finely cut
salt and pepper to season,
1 egg beaten for glazing and 'glueing'
Equipment
scales
mixing bowl
pastry brush
Several baking trays, greased and lined with baking parchment

In this video I made 3 large and 6 medium pasties. I made two batches of pastry.
For medium pasties:
The bowl that I cut around measured 7.5 inches or 19 cm. For a medium pasty bake for 20 minutes on 200 degrees C, reducing the heat to 180 degrees C for a further 20 minutes, until golden brown.
For large pasties:
I used a plate measuring 9 inches, or 23cm. To bake a large pasty, place in the oven at 200 degrees C for 20 minutes, turn the oven down to 180 degrees C for a further 40 minutes, until golden brown.
NB Our oven is older and may not get up to temperature, so keep an eye on your pasties!

Birthday Pasty! My family came from Cornwall in the 1890s (I think) and mined in the US, Upper Peninsula of Michigan (Marquette) before later settled in Ishpeming. My grandma taught me how to make pasties ❤️ my grandpa told me that they wrapped hot pasties made that morning in a towel, stuck them in their jacket / cover all to keep warm so early in the morning, and they were warmed by body heat until lunch! Also sometimes they reheated by placing on a shovel over coals. He drove horse teams when he was too young to mine, worked for loggers... Then mined copper. Life in Marquette, back then...my grandmother loved to tell me stories like how they lived in a cabin and couldn't afford glass windows, so had waxed paper, and laughed recalling snow coming in! Your video Made me cry over missing her and her pasties, too! ❤️ I love these and made them for decades. It was always my requested birthday dinner. When my grandma was very ill with cancer, I made pasties for her...bitter sweet memories. Thank you for this video. Ps I forgot entirely but you saying individual ones had our initial in it in case (I didn't like onions) My birthday is this Friday, 1/29, I will absolutely make pasties! PSS. We called that tool a pastry cutter - I still use my grandma's

I made them with 2 pie crusts from our family foods distributer and a roll of grands bisquits mix the 2 and kneaded it, turned out amazing no need to make a dough, I made reg bland ones, and one's with worsteshire sauce, with chopped fine sirloin and hamburger little meat, and a couple with jamaican jerk sauce turned out awesome and easy...

Cracking video 4 years on! Sarah, you cook the way my mum did - it’s not guesswork, there’s an art to it, that’s what gives the food its magic! Pasties looked great - even the gluten free one (I have the same issue and the crumbly pastry is always a challenge). I love Andrew’s doggie voice-overs (hilarious!!!) and boyish enthusiasm for Birthday Pasties. I enjoyed the video as much as you enjoyed eating the pasties. Hope you all had fun making the video and enjoying the Pasties. Lovely to see the doggies having their Pasty treat! Now I’m craving a Cornish Pasty!

@@CornishWalkingTrails If it has Orange flesh it is a Swede, White flesh is a Turnip and normally smaller. Cornish Pasty because they originated from the Tin Mines in Cornwall. They had a massive crimp which the Miners would hold the Pasty and eat the middle part. This was because in Tin Mining the Ore has traces of Arsenic in it so they discarded the crimp to stop themselves getting Arsenic Poisoning. Some people say they did it to feed the Knockers (Cornish Tin Mine Fairies). As the Tin Mines closed the Miners went over seas to Mine Coal instead so the crimp was reduced. There are European Legally Registered Recipe as to what goes into a Cornish Pasty and how they should be made.

@@CornishWalkingTrails Yet again you are wrong, EU regulations state that Plain Flour, Butter and Lard. (Lard is actually made from Pig Fat). Beef Fat is used to make Dripping or Suet. I must say you are doing better than most people as you layered the ingredients, The only thing I do different is I sprinkle a little flor over the Meat but what you have failed to do is add knobs of Butter over the top of the Meat to help make the Gravy. They used to take a long time to cook as they were cooked on a Low temperature for a long time. My mum used to cook them in a Rayburn or Range

Loved the lesson. We call that a pastry blender in the US, that springy looking thing. In Michigan here, pasties are also very common, especially in the Upper Peninsula, because of all the mining done years ago, just like in Cornwall. Even though too many people in the US are not being cautious and complaining about the self-isolating, my husband and I - and really, most people - are being sensible; its nice to see other countries are indeed handling things well. I'm glad you guys are doing well and keeping safe!

Me and wife and kids love a Cornish pasty. They're not cheap, but the best, especially from Cornwall. We went in 2019, and stayed at Perran Sands.I'll get my wife to make these now, thanks.

I know this is an older video but I just watched; I loved this!!! I'm in the US and there is a town in my state called Cornwall. It's a bit of a drive but I might have to go there to see if they have pasties.....yummy!

They look 'ansome. I haven't used margarine for years. My pasties never come out that good. I don't know why as I am a good pastry maker. It must be because I don't use bread flour, so I will use that from now on. My mum makes good pasties. She adds a knob of butter to the filling to create some gravy. That pastry tool looks really good, I could do with one. They sell them on eBay and are called a dough blender mixer. I now need to go and make some pasties.

This was fun to see how you make pasties. My Mom made them one way and my cousin in Cornwall made them completely different from Mom. You are so right, every house has their own way. My mother-in-law (89 year old Cornish lady) swears by crumbling a bit of oxo cube over each pasty before you pleat it. Hers were fantastic pasties so don't knock it till you try it!

Wayback in 1993 I went on my first overseas visit. I visit Renee and Rudi in London, and we went camping in Cornwall for a week. One day we walked very far all along the coast. As we walked over the last hill late afternoon the fog came over, casting the little village we stumbled into in a mysterious kind of light. We were dead tired and it was getting cold. We saw the local deli/ cafe and went in. We bought a pastry/pie each. It was the best pie I have ever had. Just a pity it is so extremely far from me or I would have gone back to see if they still make those amazing little pies. Years later I told a friend who is a famous chef in my country, and she told me that it must have been a Cornish pastrie. I never put the 2 together haha

I've enjoyed a bought "Cornish" pasty from our Coventry pasty shop in the city centre. Very passable. I've had a lot worse in Cornwall. Do you see what you're doing to me? A butchers in St Columb Maj, did beautiful pasties. Times past, but you both bring it alive.

They look fabulous!!!When we visit Cornwall,we always try to have a pasty from Elizabeth in Coverack.She sells cakes and scones,as well as the pasties,from her thatched cottage near to the shops.Hopefully,when things are back to normal,we'll be able to come down to Cornwall and get our pasty!

Lovely job, and your memories are the same as mine regarding initialing, hehe. Glad you mentioned the gravy/juice from using skirt beef, that's the real deal. The turnip you have is a swedish turnip, hence the common name Swede. I'm sure you know that but for other viewers, a Turnip is white and generally smaller. Thanks for the videos, I thoroughly enjoy your uploads and the both of you.

I always used to put vinegar on my pasty as a child, not now though, we had our initials on too. Mum would make an extra one and slice it up cold to have with Sunday tea.

Great video! Have to say thats the way I make 'em too but with more pepper in them (I'm not Cornish btw - I'm from 'ampshire) I like white turnip in my pasty as they are a naturally a bit 'peppery'. Your pastry crimping was pretty good too! You both sounded very Cornish in this video, your accents came through quite strongly -having watched many of your videos, this was the first time I really noticed the Cornish burr. There is an excellent pasty shop in Newlyn where my friends live. Your videos are superb and should be shown on mainstream tv! Best wishes x

Bloody Good Job! I was looking to explain to my wife this layering method which I prefer. Premixing the ingredients is lazy and gives a uniform filling. Your way is 1000% more interesting to eat! He gets Cornish pasties flown in and he puts them in his oven and sells them from his café. So I have been able to taste these here. My name is Patsy and more times than not my name is misspelled Pasty--I will be trying pasties next year in Cornwall, Covid allowing That tool for mixing the margarine into the flour is called a dough blender. I have one, but I had to look it up online just now to see what it is called! I live in Ohio, USA. Love all your videos!

I made “Cornish” pasties last week (I know a true proper Cornish pastie needs to be made in your hometown... I live in NY, such thing as NY pasties. I can start a trend😝) they sure were delicious... they looked like yours! Next week I am trying my hand at clotted cream & scones... hope you are doing well. Stay safe!

I’m going to give this a try for the first time later, unfortunately I don’t have skirt so will use steak and due to shortage of flour we have ready made - fingers crossed and thanks for sharing and inspiring x

Thank you so much for all your lovely videos. I can't tell you much they have helped hubby and I through this awful time. I have bought a pastry blender like the one that you use and what an amazing tool! I have always wondered why cornish pasty pastry tasted so different to other pastries, but now I guess it must be the use of bread flour instead of plain! Your videos are amazing, keep up the good work!

They looked delicious Sarah - well done. John is now dribbling!!! Vinegar - John says that is sacrilege! I never have success with gluten-free flour, but it is useful for brick making and laying paving. It was lovely to see your two little boys again. Take care xx

Well, you inspired me and I'm in the process of making a pasty right now. Is it right, that 1oz are 38g? 1lb are 16oz=454g?? Tell it all the metric world ;-) Cheers Two hours later .... my pastime pasty is gone and was very delicious. Thank you for the idea! You know, that means, that I varied the thing a bit. My filling was chopped meat, egg, onion, carrots. The most surprising experience to me was, that the pasty wasn't burnt black after one hour of baking. Just great! And I have to add: The butter must be COLD!! That`s why you well use your thingy,- you don`t worm the butter with your fingers.

Yummy!!!! We may try this. That thingy is a pastry cutter and I use one all the time. It also keep your butter or shortening from melting because you hand are warm. Sarah I totally understand you way of cooking I’m the same way. I measure nothing.

Cornish Walking Trails I have got a back yard full of turnips. We grow a veg garden and we eat the greens but hardly ever the turnips. My husband and I love them. But the kids Na.

I like A Wiltshire Pasty. meat Pork, spuds. turnip or swede. also chopped onion, some suit. all precooked then wrapped in short pastry sealed at the top cook half an hour.

Greetings from New Zealand. My previous pasty making attempts have been a bit "ho-hum" but you've inspired me to try again for tonights tea. Eventually I'll make my Great-great-grandmother (from Pendeen) proud :) No swede on hand so I'll just leave it out (don't really like it much anyway).

@@Rfoz51 Turnip and swede are definitely different vegetables. Turnips are generally smaller than swede and the flesh is white often with mauve or purple colouring at the top. They are generally a flattened sphere (oblate spheroid technically!). Swedes are distinctly purple-ish on the outside and the flesh is orange.

Also frozen shortcrust pastry works great if short on time or hungry. Handmade pastry can also split if not enough marg/lard content.

Ate a pasty made by Gi......rs (you know who I mean) meat was like mince so a bit of a flop. The proper pasty shops are all in central London or on the M4 :( I will get the girlfriend to make to your recipe Sarah, looks deeelish and authentic!

That " horseshoe pastry thingy" is called, A "Pastry Cutter". Used to "cut" the butter into the flour for pastries, just like what you're doing!😀😀 Works great! We like making and eating pasties in Michigan!

Lovely pasties Sarah but where were the knobs of butter on top the filling before closing and crimping...just asking..lol. love you two...Great fun and made my tummy rumble seeing how delicious your pasties looked. The rutabaga or swede differs from the turnip (Brassica rapa) in that it is typically larger and yellow-orange rather than white. ... In the north of England and Scotland, the larger, yellow rutabagas are called neeps or swede from folk etymology, while the smaller white turnips are called turnips.. Both make great pasty Turnip (terminology) - Wikipedia
