In this video we made a fermented Potato Sausage. It was very unique and ended up with a spreadable texture. This is in part due to the ingredients 50% potato and 40% pork fat. It ended up very rich and smooth.
I don't think I ate this in a traditional manner but non the less it was quite good.

Taking the casing off and using pieces of the stuffing as toppings for a pizza could be good, I imagine. The fat would melt and the starches of the potato could crisp up. Interesting sausage!

I don't think we will be doing a fermented sausage. We don't really have the room to hang it for however long it takes. But the video is great. Had a chuckle watching your face after the first bite. Definitely a Kodak Moment. Thanks again for doing these for us.

I think I used to eat this all the time at my grandparent's place. We would spread it on toasted french bread to get a bit of crunch. I never knew what it was called though. I will have to buy some to see if it is the same thing.

Probably best eaten on bread. It is similar to German Teewurst and Italian Nduja. They also have a soft, smeary texture. To me, they are delicious, but a lot of people get thrown off by the texture.

"Mashed potatoes with meat flavour" Reminds me of school. In Sweden they make this dish named "lapskojs" with mashed potatoes, salt beef and beets. It's very tasty, but doesn't look great.

Maybe a fry or bbq to fix up that rubbery skin. I have only made potato sausage once, and it was Eric's from 2 guys and a cooler. But like ones you made in the past it was a fresh sausage. Regardless another great video Duncan, really enjoying this season. Cheers

Hey I just made a fabulous Potato sausage yesterday that is beyond stellar. They are comfort food and then some! My recipe was a fresh sausage and was just a mash up of stuff I just added. Caramelized onions, Italian spice, pepper, dried garlic and red pepper mix, some fermento SD was added.

A great video which I thoroughly enjoyed. I have also never had a fermented potato sausage although I have visited Spain a few times. We have a potato sausage here in the UK called Glamorgan sausage if you have ever heard of it. It is very good for breakfast. Thanks again for the video.

I've been wondering about potato sausages for a while so this video was great timing. Texture sure seems weird (your facial expression was priceless, lol), maybe one should try to reduce the potato content and substitute more protein? A fun experiment none the less.
