We present to you the simple recipes of Kiyomi Mikuni, the owner and chef of the Mikuni hotel, a French cuisine restaurant in the Yotsuya district of Tokyo.

Braised eggplant stuffed tomato and onion
【Ingredients】 for 4 persons
4 eggplants
1/2 onion
2 cloves garlic
2 tomatoes
1 bell pepper
Fresh basil
1 tsp ground cumin
Some Ichimi (coarsely ground chili pepper)
Salt and pepper
50ml + 50ml water
2 tablespoons + 2 tablespoons olive oil
【Preparation】
・ Peel 4 evenly spaced strips from each eggplant. Cut up the peeled strips.
・ Slice the onion.
・ Chop the onion and bell pepper.
・ Cut the tomato into pieces.
【Procedure】
1. In a skillet, heat 2 tablespoons of olive oil. Fry the eggplants. Add 50 ml of water. Leave to braise, covered, for 10 minutes. Season with salt and pepper.
2. In another pan, heat 2 tablespoons of olive oil. Sauté the onions, garlic, eggplant skins, and tomatoes. Once the liquid has reduced, add the bell peppers, basil, ground cumin, and some ichimi pepper. Season with salt and pepper.
3. Make a cut halfway into each eggplant (1) along a peeled section. Carefully open each eggplant a little and fill with some of (2).
4. Return (3) to a pan. Add 50ml of water. Braise, covered, for 1 to 2 minutes.
5. Garnish with some fresh basil and serve on a plate.
