Paula Deen helped me when I was moving out of a homeless shelter and into an apartment. She sent me several mixing spoons, apron, can opener, and a wonderful pan with lid, plus her season salt. She didn't know me but I will always be grateful..

That's how I do it as well! I have always started with a roux, and I've never thought anything of that and just assumed most others did the same. Turns out, I think we're in the mac and cheese minority.

Here in Sc (and other southern states)....a lot of black pple do not make a roux but white pple do... but up north, white and black make a roux. I hate to put color in it.... but that's my honest findings. I find it so fascinating, but I'll eat it either way as long as the kitchen is clean and the food is seasoned. 🤷🏾‍♀️😍
