INGREDIENTS
- 1 cup ginger, peeled and chopped
- 12 ounces malt vinegar
- 1 cup light brown sugar
- 5-6 cups peaches, peeled and chopped
- 2 onions, finely chopped
- 2 green peppers, finely chopped
- 2 banana peppers, finely chopped
- 2 hot peppers (I use habanero)
- 1 cup dark raisins
- 1 cup golden raisins
- 2 teaspoons salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cloves
INSTRUCTIONS
Roughly chop peeled ginger and tie in cheesecloth squares, creating a bag. Set aside.
In a heavy-bottomed saucepan, mix together vinegar and peaches and stir over medium-high heat. Bring to a boil and cook until peaches begin to become tender, about 15-20 minutes. Add sugar, onions, peppers, raisins, and salt. Reduce heat to boil gently.
Continue cooking to thicken and reduce chutney. This process can take anywhere from 30-45 minutes depending on how hard you cook the mixture.
After approximately 15 minutes, add the bag of ginger into the chutney. After 30 minutes, add the cinnamon, nutmeg, and cloves. If you don't want the unique flavors from the spices, you can leave them out, but they do add a lot of interesting depth.
The chutney can be cooked to your desired thickness. I like mine to mound thickly on a spoon. To help thicken and break down the peaches, use a potato masher throughout the cooking process to mash the peaches. Once ready, remove the bag of ginger and discard it.
As the chutney is becoming thickened, prepare your jars, water bath, and lids. I like to put mine in half-pint jars as I use it in small amounts for entertaining (and to enjoy for myself!). But any size jar is fine. Pour hot chutney into prepared jars, leaving 1/2 inch of headspace. Place on prepared lids and rings and process in a boiling water bath for 15 minutes. Remove and let sit for 24 hours before removing rings or storing.

I made this 3 weeks ago and opened the half jar today. I followed your recipe exactly malt vinegar, light brown sugar, bagged the ginger, and all the spices except added 1 seeded hot banana and 1 seeded habanero. I made 5 1/2 12 oz jars using 8 large peaches and measuring all the rest of the ingredients, when done, canning and water bath 15 min. It is so delicious and will only taste better with time as all chutneys do, I like to keep it shelved for 3 months before opening. Its now my favorite chutney, and I've made apple, pear, mango, date...., I love chutney. This peach chutney is wonderful just the right bit of tang and sweet .perfect with poultry, cold meats, cheeses and crackers. Thank you so much for sharing this fantastic recipe! If there is only one chutney you want to try to make, this is the one especially on a cheese board for the holidays..the stores still have peaches available!

I always have peach chutney in the fridge. I don't cook without it. Here in South Africa we have the best chutneys in store, favourite being Mrs Balls Chutney. But thanks so much for the recipe, maybe I will try it sometime. It looks delicious! I love home made stuff, just tastes better than store bought.

I just made this recipe with freshly picked, Fay Elberta peaches, which are freestone, and juicy. Even though I cooked the chutney as directed and simmered it until it was reduced, it was too runny, had no shimmer as chutney usually does, and it frankly looked looked like something that needed to be flushed down the toilet. The taste is good but not exceptional. Sadly, I will be looking for another peach chutney recipe.

Once they are sealed it is best to keep them in a cool dark space, a basement is great if you have one or the back of your pantry
