I made a cream-filled cake with peach compote.
The compote is made into jelly with syrup and used between the cakes and for decoration.
The sponge cake is made with black tea, which goes well with peaches.

300ml water
50g granulated sugar
10g lemon juice
200ml compote syrup
10g gelatin
■Tea sponge cake
2 eggs
60g sugar
55g cake flour
4g tea leaves
■Whipped cream
250ml heavy cream
20g sugar
1 tsp vanilla extract
120ml heavy cream
10g sugar
■Glacage
30g heavy cream
30g granulated sugar
40g white chocolate
3g gelatin
food color
