I think frozen peaches let off too much liquid and didnt have enough natural pectin to firm it up as a fresh peach would!

Usually the pie crust shield you put on after the crust has been baking awhile and is set, just to avoid over browning. If you put it on in the beginning that will cause the crust to collapse. Please do a list at the end of the most and least favorite pies, hardest to make, ones you will make again and ones you won't etc..

I definitely vote for whole fresh peaches 🍑 or fully defrosted and padded dry frozen peaches...as well as a Tbs of corn starch and sweetener added to the peach component....the cream is a mystery to me without seeing the recipe. I look forward to hearing some other ideas. I love the concept and title of the pie 🥧

I keep noticing that you may be making filling for 9 inch pie when your pie pan is a10 inch deep pie pan. This can cause your crust to cave in. Fruit and custard pies should call for some kind of thickener be it flour, corn/potato starch, or xantham gum. The peaches and cream pie my granny made was basically a vanilla cream custard with peaches. I love the laughter this pie adventure is bringing. Thank you for your hard work.

If you are still looking for ideas and would like an easy no-bake pie for Jude and Eve to make with great independence, consider a Kool Aid Pie: Pre-made Graham Cracker Pie Crust 1 can of sweetened condensed milk 1 container of whipped topping 1 packet of unsweetened Kool Aid mix. Mix the Kool Aid powder and sweetened condensed milk until there are no streaks left. Fold in the whipped topping. Plop into the pie crust. Refrigerate at least 2 hours. Optional: decorate with additional whipped topping, sprinkles or fruit. Eve and Jude could each choose their favorite flavor of Kool Aid to make it individual.

That was an odd recipe and I don't think it was you guys that made it not work. The "cream" part, would make whipped cream had you whipped it...but you really wouldn't bake that. There was no binder in the recipe to solidify all the liquid...well technically powdered sugar has some cornstarch in it, but not enough for the amount of liquid and peaches. My bet is, this one slipped by the editor, something wasn't written out right. Totally enjoying the series though :) even the fail!

Still loving the pies! Even the “failures”! Try it again in the same deep dish pan and keep the same amount of cream mix-but increase the amount of peaches and make sure they are FRESH peaches. (It looked skimpy on the peaches.)

When I was on a health kick I whittled down my pantry: No butter, only olive oil. No white flour, only whole wheat. No white sugar, only molasses. My middle daughter (in Jr high at the time) decided to make an apple pie after school with the apples we picked at the orchard. That sweet girl sifted the bran out of the flour, made the crust with olive oil, and used the molasses to sweeten the filling. I was so impressed and we ate the whole pie although it was unconventional. She is in her forties now and she has taught my 10 year old grand-daughter to love baking pies. The pies are wonderful.

I see the original pie crust came from a Cook’s Illustrated book. If you don’t feel right copying that recipe for us, no problem at all. But would you mind giving us another one, close to it, that you have tried and like? Any details for these pies would be appreciated. I want to have fun in the kitchen right along with you. Peaches are better as a cobbler I've found..using as ripe and sweet peaches as possible with sugar, thickener of cornstarch or flour and I think dollops of butter is a secret in this and apple pies. You could put a crust on the bottom and a detached top crust..still a pie just a deep dish pie. And yes the wavy crust edge is more familiar to me anyway. But when pre-baking crust alone you've got to poke with fork all over even with weights.
