Pecan Divinity
2 2/3 cups sugar
2/3 cup light corn syrup
1/2 cup water
2 egg whites
1 teaspoon vanilla
2/3 cup chopped pecans
Cook the sugar, corn syrup, and water in a 2 quart saucepan over low heat, stirring constantly, until the mixture comes to a full boil and the sugar is dissolved. Once it comes to a boil, continue cooking without stirring to 260° on a candy thermometer.
When the sugar mixture is almost at 260°, beat the egg whites with an electric mixer on high speed until stiff peaks form.
Continue beating the egg whites while pouring the hot syrup in a very thin stream into the egg whites, beating constantly on medium speed. It will take a few minutes for the mixture to thicken and hold it’s shape as you continue to beat it. As soon as the mixture holds it’s shape when the beater is lifted, add in the vanilla and the nuts.
Working quickly, drop the mixture from spoons onto wax paper or parchment paper. Let stand at room temperature to completely cool. After a few hours, flip the candies over so that they will dry and become firm on both sides.
Store in an airtight container.
Will yield approximately 20 candies.

I used to make this for my daddy every Christmas when I was a young teenager.I would clean a 3 pound coffee can(yes there were 3 pound cans of coffee then.) I wrapped the can and the lid with Christmas paper and gave it to him for Christmas . He loved it. Sweet memories.❤

My Mom would clean the used cans and bake Christmas breads in them, and they were so cute! She would pop them out of the cans and ice them or sprinkle them with powdered sugar, wrap them in cellophane tied with pretty ribbon, and give them to family and friends as gifts! I sure miss her!

We love Divinity and I make pecan and also Peppermint with finely crushed candy canes to a powder. I am 80 years old and learned to make them with my Kentucky Grandmother who used no mixer. About 10 years ago I had problems holding the heavy pan of syrup to slowly pour the syrup in so here is what I did. I looked for something as high as the top of my bowl to set the pan on and lean it over the lip of the bowl. A cast iron skillet turned upside down with my cast iron tea kettle on top of it worked great for me. So, maybe those who have that problem & still want to make it can look around their kitchen and see what would work for them before starting to make this candy. You demonstrated this perfectly and everyone should be able to make it. Thanks so much, enjoy this.

When my mom was around 10 years old,(1924) her mama was making her some divinity for her birthday. It was a very rainy day so the humidity kept the candy from setting up. Her mama gave her the pan and a spoon. That was her birthday present. We always had black walnuts in our baked goods and candy. We had a tree in our yard so we didn't buy other nuts.

I love divinity! I have never made it. It brings back memories from childhood. One such memory is that there was a lady in our small town. Every year at Christmastime she made divinity, sold it in the community, and gave the money to the church. She was a precious lady. She had to walk in order to sell it, and she was not a really young person. I always admire her, even though she has been gone for many years.

I’m 87 years old and I remember watching my mama make divinity. And yes I remember a few times it did not turn out. Back then we had to use the cold water to tell us when it was at the correct stage. I actually made a batch or two when I was around 12 years old. Speaking of old fashion candy, have you ever heard of penuche fudge like candy? It was made with brown sugar sugar and milk and and I think real home churned butter.

My grandmother made Divinity but my mother wouldn't make it. My mom always stated that it takes a special person to make Divinity and she never would attempt to make it. After watching this video, I'm going to make Divinity for my husband. It is suppose to be raining here all day tomorrow and I'm going to take the time to make several of the Christmas treats that you made in this series. Wish me luck. I know that my husband has had this candy, he is a few years older than me and from Arkansas. I first tried this candy in my teens because when we would go to my grandparents for Christmas, there was just so much to eat, it wasn't until I was older when I tried it for the first time. My mom and grandmother have been gone a long time. Tom, I'm going to honor them both with your recipe, wish me luck. Peace, Joy, Love and Happiness to you and your family this holiday season. Merry Christmas and much love from North Carolina.

Divinity fudge is one of my favourites. The church we attended had a Christmas Bazaar the first Saturday in December which was always around my birthday. I can remember how exciting it was waiting for it to finally arrive. We lived in Maine and my grandparents lived in Kansas. I'm so happy ❤ that I found your shows right in time for Christmas. When you're giving the recipe instructions I like that you repeat it and then say it once in a sentence so that we know that we're getting the proper instruction and you're giving us enough time to write it down. I have watched each one of your "12 days before Christmas" shows and do have a question about your Divinity show today.. The reason that I'm intimidated by Divinity, is all the folklore regarding humidity when you make divinity candy. In Oregon we usually have high humidity in the winter and so I'm afraid to go through all the trouble just to have it turn bad in the beating process. Does humidity have a lot to do with the final result of a perfect divinity? And my grandma made it with the pecans in the blended foreign but she's would take a half of a maraschino cherry and put on the top if I remember right or she might have had pink Divinity with a half of the maraschino cherry on top. My grandma would bake thousands of cookies and different kinds of candies to donate to the church for their coffee time on Sunday morning and then for their bake sales for fundraisers.

I could tell that your candy set up before it came off the spoon. So I think you are right, stopping your mixer about 30 seconds earlier at least would have possibly kept it from setting up so quickly. But I bet it still tasted delicious. The only intimidating part to me is getting it on the paper to set at the right time. Thanks for giving us your grandmother’s recipe. For the life of me I have no idea how she kept from using a mixer.

I haven't made that for years. And yes I was always scared to make it. I saved this video and make it when I get a candy thermometer. You made this look easy, thanks

I use to help my two old mid aunt make candy at Christmas before I was a teenager. We didn’t have an electric mixer. To beat the egg whites we us an oval chicken wire whisk! Probably a wooden spoon to mix and beat. Wow! Makes me tired just to think about it. But, at 83, I still use that type beater for egg whites!! Thank for the memory. We made Date Nut Rolls too, wrapped in a wet flou sack dish towel. 😅

My grandmother made this every holiday and she never ever owned an electric mixer. She did it all by hand 😮

Tom, you never have to excuse your show for displaying the honest duration of the process. I learned to cook from my father who is about your age. I loved to sit and watch him cook all afternoon... We are of Italian culture... So it took all afternoon. You give me something that I cannot even express in words truly. I find so much comfort in your channel. You remind me of my dad. Please keep being you!

Tom and Melissa I have an idea for you... Consider maybe offering a director's cut of your episode which would be the long version. Your editing has evolved and I think you both do so well at it so your production is professional and I understand you would want to trim it up to make it presentable. But there has got to be more people like me who enjoy watching you through the whole process. Consider what that might do for your channel. I wish the best for you both.

Both my mother and my grandmother made divinity but I have never tried it. I remember how proud my mother was the first time she made it and it turned out delicious. Maybe I’ll try it this year.

One of my sisters-in-law put her in a 9x13 pan. It was the best divinity I ever had. I wish I had been able to see her make it. Years ago I came across a box mix that made frosting like 7 minute frosting and it had a recipe for divinity. It was easy and tasted good. Unfortunately I haven’t been able to find it anywhere.
