Although she was a neuropsychologist, which means she did understand feelings, but because of her upbringing she was never intouch with them. She understood feelings and social norms through a very textbook observation, which made it easier for her to understand and embrace those feelings later when she was with Sheldon.

Lol Lol I would say though that Amy had an up bringing that made her repress her human feelings, but they were there and she was able to get in touch with them. Sheldon, as it's been hinted at, is in the autism spectrum, and had a very hard time knowing which emotions to use and when. There is a big difference between Amy who doesn't seem to be on the spectrum, just grew up very socially oppressed, and Sheldon who very likely has a condition.

Her meeting Bernadette and Penny was a massive change for her and it helped break her out of her shell, so to speak. By the time this episode happens, she's had so excellent character growth and it shows in how she coaches Sheldon on something that she was originally incapable of.
