I'm allergic to peppers but I find the science behind capsaicin fascinating. It binds to sodium ion channels to mimic a burning sensation like he said. Menthol does the same on a different receptor but with cold. There's a cactus in Morocco if I remember correctly that has capsaicin as a defense mechanism but it's concentration 16 billion Scovilles, it's called Resiniferatoxin. Scientists are looking into the stuff for chronic pain because it's so much that it essentially just burns your nerve endings away.
@mercster
@mercster Год назад
What is it in the peppers that you find yourself allergic to?
@auroramcbride1688
@auroramcbride1688 Год назад
@@mercster I'm not entirely sure tbh. When I eat any my throat feels really scratchy. I had a job at a pizza place when I was younger and green pepper juice got in my glove while making a pizza, I put it in the oven and took off my glove and I had patches of my skin eaten away. I've accidentally eaten paprika and had minimal reaction, so it might just be the oils, when I asked my allergist about a scratch test of any kind I was told they can't test for it. I may only be allergic/sensitive to bell peppers, but if someone cooks spicy food in the house my eyes burn so idk. I'm not taking any risks lol

Interesting to hear that pepper sauce preserves as it is. I just harvested my first peppers and find out there will be lot more of them than I can eat before they get bad. I just couldn't find any sauce with proper ingredients. I want pepper flavor, not garlic, vinegar or mustard. I ended up mushing them with tomatoes and put on a freezer packed into ice cube bags. I stored bags into glass container to avoid taste contamination. Then I can get fresh pepper taste around the year
