Pepperoni Balls - A Western Pennsylvania Treat | Chef Terry 

My mother worked at a store that sold fresh Pepperoni balls. This are a soft roll stuffed with pepperoni and cheese. Much like a calzone or stromboli. These were much smaller and make a nice snack or for small gatherings.

Sponge
1 cup All Purpose Flour
1 cup Water
1/2 teaspoon Yeast
Dough
1 cup All Purpose Flour
1 cup Oat Flour
1 ounce Honey
1 ounce Olive Oil
1/2 teaspoon Salt
Balls
Pepperoni 1 inch diameter sliced thin. about 5 per ball
Cheese 1/2 inch cube. Provolone or Fontina
