Component
Frying the haddock
2\1 1 kg of asado
1 teaspoon of salt
1 teaspoon crushed or ground black pepper
3 tablespoons of olive oil
Frying the onion, garlic and mushrooms
5 medium onions
5 medium purple onions
5 cloves of garlic
1 package of fresh champagne mushrooms
100 ml of oil
1 teaspoon of sugar
Assembling the pot
A head of celery without the leaves
2/1 hot green pepper or chili for spiciness - optional
4 bay leaves
Seasoning
600 ml of water
1 teaspoon of cinnamon
2 tablespoons of teriyaki sauce
1/2 tablespoons of tomato paste
1 teaspoon of salt
1 teaspoon pepper
2 tablespoons of dry thyme
2 tablespoons of paprika
Preparation
Heat the oven to 150 degrees on baking mode
Preparation of the ingredients
Peel and cut the white and purple onions in half and then into thin slices - thin onion strips are obtained
Peel the garlic cloves and cut into slices
If you want to add spiciness, wash the seeds and cut the hot pepper into slices
Cut the celery into 3 cm long pieces
Cut the mushrooms into thick slices - if the mushrooms are small, you can leave them whole or cut them in half
Cut the asado into 4 cm x 4 cm cubes
Frying the haddock
Season the asado cubes with salt, pepper and olive oil and mix well so that all the pieces are covered in the seasoning
Heat over high heat a pot that is also suitable for cooking in the oven (if you don't have a pot that is suitable for the oven, you can prepare everything in a regular pot and then transfer to a deep dish to continue the slow cooking in the oven)
Sear each cube of all the sides for a few seconds until a brown coating is obtained, take out to a plate or tray (this step is very important and gives a special flavor to the meat)
Frying the onion and assembling the pot
Add 100 ml of oil to the pot, after two minutes it heats up, add all the onions and mix
After five minutes, move the onion a little to the side in an empty corner of the pot and fry the garlic there for a minute
Add sugar and continue frying until the onions become transparent
Add the mushrooms and continue frying for another three minutes
Arrange the meat cubes nicely in the pot
Push each of the bay leaves at a different end of the pot between the cubes of meat
Add the celery and hot pepper and lower the heat
Seasoning
It's easiest to take all the seasoning ingredients and put them in a bowl or other deep vessel, mix, then pour in a circular motion into the pot so that it reaches all the meat, or alternatively, put everything directly on the meat and after adding the water, mix
Increase the heat to a boil - and give it another two minutes of cooking while it is bubbling
Extinguish the fire
Slow cooking - baking
Wrap the pot with foil that will be tightened right around so that no steam comes out of the pot
Put the slow cooker in a preheated oven for two and a half hours
After two and a half hours, take out the foil, raise the heat to 180 and let it cook for another 20 minutes
Remarks
The asado keeps well in the freezer for a month
with appetite!!
