The oxtail recipe is from ATK's cookbook on braising. I made this dish and it is one of my favorite recipes to make. I skipped the sherry vinegar , and fresh oregano and it was still amazing.

I really enjoyed this episode because both of the highlight dishes used a main ingredient that I am inexperienced with. The oxtails in the braise and the fresh artichokes in the vegetable dish. I am looking forward to widening my horizons 😁

i never tried oxtail before until i visited a friends house. i fell in love with it. They made it like into a stew with beans. SO tasty! Very tender meat

Totally agree. Love my Lodge and it is currently $39.00 on Walmart.com. They have an affiliate link to a what $350.00 then a $89.00. Sort of appears conflict of interest to me where Test Kitchen prefers to make money and send me off to waste money on items that put more money in their pocket. Buyer beware. I have used my Lodge 3-4 times weekly for approx 8 yrs and it remains amazing

Dale Trayner Buyer beware? Le Creuset makes amazing products. It’s no surprise it won the testing. There’s nothing wrong with Lodge but many prefer enameled over plain cast iron for Dutch ovens.

Brendan Dever mine is the blue enameled lodge pot. Le Cruset makes great stuff. I have about ten pieces. I was just rooting for the under dog😉

That oxtails and beans recipe looks very appealing. I've cooked oxtails in the past, but only to extract the gelatin for use in soups. As a side benefit, I nibbled on the remaining meat and found it was still tasty and very tender, so I'm confident that the oxtails and beans recipe will be fantastic. I'll look around and see about getting some Aleppo pepper powder, and then I'll be braising some oxtails! :D

Both dishes look amazing! They'd both be good over polenta, too. I wonder if you could chill the veggies and used the cold as part of an antipasto or a pasta salad. The only fat was olive oil, IIRC, so that should work out well. Thanks!

I didn’t want to spend that much for a Le Creuset Dutch oven and always watched for deals. In the meantime I snagged a Black Friday deal from Amazon on their “AmazonEssentials” brand enameled cast iron Dutch oven . The current price for the 7.5Quart round is $62 and I haven’t had any issues with it at all (of course I don’t slam the lid on it or temperature shock it either). Just a budget friendly suggestion for those looking.

I'd like to ask ATK what kind of like that is used in the last segment. I am pretty sure I have seen it before but I cannot find it as a recommended item. It has a glass center section and the edges look like they can accommodate different sized pots and pans. It also has vent holes and a large handle. It looks great. It can be seen at 19:11. Thanks

I’ve used the plain cast iron Dutch oven . I have 2 different sizes.it works perfect for me roast baked chicken chicken stew pork ribs lots of different dishes the nearly $400 dollar not

angellover02171 I’ve cooked for over 59 years used my grand mother’s cast open . No I haven’t any one ate my cookin g wanted more . I not putting that Dutch oven down . I’m just saying you can cook out of anything . Anyone who has one I glad for you . I put sugar in my tomato dishes . ❤️🙋‍♀️ garlic vinegar ginger . Now I’ve never used curry spice . But I don’t like curry.

Any tips on washing a dutch oven after braising beef? Mine always looks like that and takes a lot of painful scrubbing afterwards. 7:11.

Using a paper towel, I preoil the whole interior before you start cooking. After everything has rested and you’ve transferred everything out. Wipe out any solids. Put Dawn dishwashing in with hot water to the top. Let it sit while you eat, or do other kitchen cleaning. When your ready, be sure you won’t burn your hand, scrub while full of water with a plastic or walnut scrubber, like Grove Collectives which is dishwasher safe on the top rack. Run the hot water to keep your drain clear, and dump the dirty water rinsing with the running water. Rinse your scrubber too. Dump all the water out. Squeeze a bit of Dawn in and with that rinsed, wet, hot scrubber put a little elbow grease in using that concentrated Dawn. Rinse and repeat until all clean. If you’ve done this since the pot was new, I’ve never had to do more than the two scrubs except on tomato heavy things, then three to four scrubs. The pots I do this on are the LeCruset enameled cast iron, and my Preferred Stock or Sears stainless steel Dutch ovens. I think the Dawn and preoiling are the secret.

My favorite braise: Braised beef with fig and tomato. I steal figs for this. >:) Unless someone else walks by the fence with figs hanging over... >:/ My fig trees are puny. And i killed one.

As long as you get an enameled dutch oven with a light interior and a wide base at the right volume, you will be fine. I bought one 3 years ago from a no name company on amazon (before I stopped buying from them), even with very regular use, it is still basically brand new. It is heavy, holds heat, browns and caramelizes with the best of them. Plus, it is a handsome red color and cost less than $70. Can't complain.

Le Creuset at $368 US?? Thanks, guys, but I'mma keep cooking in my 1950s Vollrath No. 8 6-quart cast iron DO, which I was fortunate enough to be given by my wife's bf. Short of giving me a 19th-century Wagner piece, you ain't gonna pry that one out of my kitchen.

I've had that exact Le Creuset dutch oven for over 12 years, and that pristine white enamel on the inside is long gone. It's still a great dutch oven, but now it's no better than a regular cast iron version. However, I paid "only" $200 back then :)

I like oxtails, but cooked the traditional way and now I use my Instant Pot to cook them in with potatoes and other vegetables. That dish made looked nice, but takes too long and uses up several pieces of cookware.

okay, so first of all, Ox tails is NOT an inexpensive food. each tail goes for about $10. for that amount you could get cheaper cuts and more meat.

It's such a giant amount of fat - not only does it make the meal feel greasy in your mouth, but that much fat can result in some gastrointestinal distress for people eating it (basically, it goes straight through them).

Elwyn is right, but not completely right. If you're having a standing rib roast(Ribeye roast), then you want that fat, for example. If it's in a sauce after a braised piece of meat, typically you want to remove the fat as it will add no flavor after several hours of braising.

Fat is flavor. So you don't want to completely remove it from meats, especially not roasts. But when you're doing a stew or soup, it's not going to do anything but float on the top. You could braise and then skim off the fat (with a spoon or bread). I've done that. Or you could try and emulsify it in the braising liquid/soup once the dish is cooked using a blender. The gist is you don't want to eat a spoonful of liquid fat. (Or maybe you do.)

Braised Beef Shanks ... WHY? Would you build your braise in the nice new pot with EVOO and not use the great flavor you have in the rendered beef fat. This after all is about flavor ... Save your EVOO for the salad dressings.

That was exactly what I was thinking. Also, after separating the fat in the separator, did you see all of the red color in the fat that they did not use? That was the pepper and tomato. Sure, you don't want all that fat, but come on! Put some in. That was flavor tossed away.

The lid knob of the winning Dutch oven looks like engineering plastic (maybe metal in a matte finish, I can't tell from the video). Engineering plastic is pretty strong for lid knob of a pot, but you couldn't put it in a oven.

​@@rmknicks Unfortunately there are Le Creuset Dutch oven indeed having phenolic plastic knobs, not safe at all oven temperatures! If you can just follow the web link provided at the introduction of this program, to purchase the winning Le Creuset Dutch oven at Amazon, go to the Technical Specification section, then click "User Guide [pdf]" link, it will pop up the "Le Creuset Cookware Knob Sizing Guide" pdf file. According to the guide, the Le Creuset Dutch ovens have five different knobs, "Signature Gold Knob", "Signature Stainless Steel Knob", "Classic Stainless Steel Knob", "Signature Phenolic Knob" and "Classic Phenolic Knob". The first three are all metal, so ok at any oven temperature. The last two are made of phenolic plastic. Though "Signature Phenolic Knob" are made of composite material and can withstand of 500F, the "Classic Phenolic Knob is only oven-safe to 390F, according to the Le Creuset user guide. So anyone out there intend to buy, make an inquiry first. Avoid those with phenolic plastic knobs, or make an additional purchase of one of the all metal knobs listed in the Le Creuset user guide, so you can replace the phenolic plastic knob with the all metal one by yourself (I don't know whether that's really feasible at the moment, so check!, before you buy).

Probably because beef broth has too strong of a distinct flavor which would make it taste too much like a packaged ramen. You want the beef flavor to come from the oxtail.

ATK rarely uses packaged beef broth. They can taste a bit tinny or sour. Usually if it’s something that will be reduced a lot, they use chicken broth

My thoughts exactly! Like anything in a profit driven economy, the price goes up with popularity. Quinoa was 69¢ a pound. Now it's over $4.

I know right??! Oxtails used to be dirt cheap since they were considered scrap meat. But now they are around $8-9 a pound on average. The cheapest place I can find is $6 a lb.

The title of this video reads "Perfect Your Braising Skills *with* Oxtails *with* White Beans and Fava Beans *with* Artichokes". *What with what???* Rather confusing! Nowadays, some people no longer believe in the need for proper punctuation to render a phrase or sentence intelligible. It would probably make more sense if it read "Perfect Your Braising Skills: Oxtails with White Beans; and Fava Beans with Artichokes". I am not nitpicking. Punctuation (or lack thereof) can make the difference between comprehension and confusion.

That would be incorrect; semicolons are used to join independent clauses. Also, headlines follow special grammar conventions.

In this particular case, the overriding consideration is clarity rather than (your understanding of) correctness. What is the point of having a title if it fails to convey to the reader the intended information/message?

Lancaster and crew are terrific -- except Davison. Her attitude and demeanor are saccharin and beyond irritating. I've gotten to the point of simply skipping over her segments. Perhaps producers should consider a viewer survey as to whether to replace her.
