I am so happy to learn this method for my salmon filet im actually doing this now using honey-soy which is previously pre-seasoned with chili powder and paprika and Goya adobo salt and cracked pepper bf I watched .. so fingers crossed! I’ve watched you since a kid I’ve raised my kids n have more time to get re-excited about cooking. Thank You ATK and CC for the joy and art and even science of cooking and all the neat stuff in between ie taste tests and gadget testing too !!!

I would love a segment on aluminum foil vs. Parchment paper and explaining what to use when.
@kateri17
@kateri17 2 года назад
as long as it is strong enough after cooking to lift the salmon up then yes. maybe a double layer of parchment in case it gets soggy.
@alextube1101

@@irisk934 I think they kind of have abstractly covering both. My Alcan boxes die of loneliness! Unless there is roasts or potatoes for company being covered...resting meat tents? Aside from that and your under 425 use parch!

Turmeric needs pepper for the antioxidants to be bio available so just throwing it in a latte is wonderful for color and flavor but that’s about it. Lol

Black pepper makes it's nutrients more bioavailable but it still has some potency without it.

Our intestines do not push through black pepper; it's wiser to use black peppercorns and then toss the shell/solid away

Salmon looked over cooked (125 is too high) and the skin does not get crispy cooking it like that.
@mrkattm
@mrkattm 4 года назад
Sure, cut into fillets, season the same way they did, dry the skin and score, get a large skillet ripping hot, once hot lightly coat skillet with grape seed oil, place fillet in skillet skin side down, don't touch or move it, once skin is crispy ( cook it 2/3 the way through on the skin side about 5 - 7 minutes depending on your stove) place under broiler to caramelize the top, Adjust times according to your equipment but that is just you cooking.
@mrkattm
@mrkattm 4 года назад
That is kind of my point, don't cook a whole salmon in this manner, it is kind of a waste because you will be loosing that oh so good crispy skin, and besides with a large enough skillet you can cook 2/3 of a whole side and I bet if you get creative you could do a whole one with only a little bit more effort. In the end they are your guests and you are the chef so it is up to you as to how much you want to impress them with your cooking.
