So glad I found this channel... I used to consider myself a decent cook but when I watch Sam work his magic, I feel like a noob and that in turn awakens my inner chef. I'm constantly picking up tips and tricks and the recipes I've tried have truly upped my cooking game! So thanks a bunch Sam and Max, you guys rock! Hi Sam, great episode! I have already been seasoning exactly the same way, but never knew about the reverse method. Mostly I would pan fry at medium heat for 6 minutes each side.. happy to have learned this thank you! keep it up with the great episodes! I used to be just a NY Strip guy but got a porterhouse the other day and was amazed by how tender. The oven method solves my problem too of such a big steak not cooking thoroughly. thanks!

It is a T-bone. Just a wider T-bone so they call it a Porterhouse to charge more. Not a bad thing, just commercialization.

Bertrice : yes, as the short loin reaches toward the front of the steer, the filet side get narrower. When the filet side is 1/2 inch or less it’s called a t-bone. Also, since filet is more expensive than strip, the bigger filet on the porterhouse commands more money. And, as an aside, Peter Lugars in Brooklyn makes the best porterhouse you will ever eat.

I cooked this recipe today and I have to say it was delicious! I used Portobello mushrooms rather than Shittaki mushrooms, but the flavour was incredible. I'm new to following this channel but really like your content and I was really to give this one a go as I love a good steak!

Love reverse searing my steaks. Always perfect results although yours looked better. Have you tried using your Caliber or Traeger at 275 to add a little smoke flavor? It kicked up the flavor.

I remember watching you prep a steak on local cable tv and even the importance of how to cut it post plating. Now i come to watch you teach me how to not ruin a 50$ steak, when i usually get the typical 7.99 per LB 10$ for a 20 oz deal. I wind up thinking the cut isnt expensive enough for me to waste time on baking/searing or reverse searing. Though the prep time/marinade needed and investment to seasoning/herb rubs/liquid smoking for said 10$ steak becomes integral in making it taste like "MORE".

I love a porterhouse steak. Las time in Vegas at Delmonico's in Venetian has a porterhouse for 2. Was about $120 for just the steak . Too be honest I now prefer a good ribeye.

You could burn that steak to a crisp and it would still be delicious. Hard to destroy a good cut of beef. The real challenge is cooking a cheap cut and making it taste like something.

Reverse searing Sam, that's the way my friend, that's the way. Low and Slow. I usually have the oven on 90 (C) for 2 hours, then sear. PERFECT every time to medium rare. Love it!!! Try to get some Cambodian Kampot black pepper mate for your grinder - it will BLOW your mind!!!

Hi Sam, in South Africa the distinction between porterhouse and T-bones is merely based on the presence of the fillet. With fillet = T-bone, no fillet = porterhouse

Am I the only one that prefers the NY Strip over the Filet? I find it to have better marbling (usually) and if cooked right, just as tender as its counterpart, the filet mignon. I know the filet is considered the "superior" cut on average but, the strip is just as beautiful. Edit: This steak was cooked properly btw, great vid brother. Definitely SUPER late to this video.

Suggestion: you are always showing us how to make main dishes... how about some side dishes? Anything including potatoes or rice is great with me! Also don't forget the fourth food group...CHEESE!

I love and hate this video. I had to watch it to learn how to make a nice 1.77 lb., butcher cut, Porterhouse steak for my self tomorrow evening. So depressed right now! My stomach is doing summer salts. Been on a liquid diet of broth for 3 days now; preparing for a colonscopy tomorrow morning, Can't wait to cook that steak tomorrow night using your method. Great video! Keep them coming!

Whether my Porterhouse is 1 inch or 2 inches thick, do I still cook it the same amount of time according to your video? 30 minutes? Also, is it okay to use extra virgin olive oil instead of avocado oil that you use?
