Peruvian Chicken Marinade
2 tablespoons soy sauce
Juice of 2 limes
5 cloves garlic
1 teaspoon fresh ginger, minced
¼ cup dark beer
1 tablespoon extra virgin olive oil
1 teaspoon balsamic vinegar
1 tablespoons huacatay paste
1 tablespoon aji panca paste
1½ teaspoons ground cumin
1 teaspoon of hungarian paprika
1 teaspoon dried oregano
1 teaspoon dried rosemary
1 teaspoon sea salt
½ teaspoon freshly ground black pepper
½ teaspoon cayenne pepper (more or less according to heat preference)

there's a Peruvian restaurant in Atlanta that's completely off the chain and they use nothing but lump charcoal to cook all their meat. They even sell the lump charcoal in 50 lb bags. I never even heard of Peruvian food until I went there. And their chicken is completely off the chain! I look forward to trying out your method brother

I'm going to Restaurant Depot and buy a 40 lbs box of leg quarters. In the DC area we have a ton of Peruvian Restaurants. The two crowd favorites are Sylvestries and Sardes! The smell of Peruvian chicken smoked cooked rotisserie style is addictive. I will be trying your recipe.

"Amarillo" = (ah - ma - rrhi - yo): in Spanish diction/alphabet the double "LL" is pronounced with a "y" sound, and do the culture justice and roll that "r"

Hello Daryl. Ley me give you a hand on how to pronounce "huacatay". "Hua" sounds like "what" without the final T sound, "ca" sounds like the initial CA in California and finally, "tay" sounds like "Thai" (Asian food). So, you can pronounce "huacatay" like "wha-ca-Thai".Regarding your recipe, I have no doubt that chicken was delicious and perfectly cooked but ingredients like extra virgin oil and balsamic vinegar have no use in typical Peruvian food and "Pollo a la Brasa" (original name) is typical Peruvian food. I would like to share a link or 2 for recipes and preparation but I believe you can not do it here
