Hello everyone, today I am sharing another one of mom's recipes - a traditional Christmas Eve pastry called Tikvenik (or banitsa with pumpkin).
It is absolutely delicious - creamy and crunchy at the same time with the sweet holiday flavor of cinnamon and pumpkin.
The correct cooking times are:
Bake at 300 degrees Fahrenheit for 20 minutes. Then increase the temperature to 390 degrees Fahrenheit (200 degrees Celsius) and bake for another 30 minutes. Make sure to check on the tikvenik and if it starts to get golden on the top too fast, cover the tikvenik with parchment paper.

Cinnamon
Sugar

It looks and sounds scrumptious! I love the part where you couldn't find the seeds in the squash! Many years ago I grew a lot of that kind of squash, called butternut squash, and I love it. I use a potato peeler to remove the outside also. The clips of your mom making this are a wonderful addition to the video. Thank you for sharing a little piece of Bulgaria. ❤️
