My pleasure!! I would say, if you like your peppers crunchy.. let the brine cool down completely before pouring in the jars and then only water bath for 10 minutes 🥰 Mine ended up slightly too soft this go around.. so those are the changes that I'll make next time! Enjoy!

Good point about letting the jars cool just a bit before taking them out of the water bath. I did not recall seeing my mother or grandmother do that. Needless to say, the first time I canned pickled beets I allowed a couple jars to "siphon" all over the place! Nasty clean up.

You'll have to check your stovetop's manual and see if it's rated for the weight of the canner or not. I know most newer model ones are, but check just to be sure 😊
Hi, watched your pickling banana peppers. Good recipe! I have a lot banana peppers from my garden this year. Was wandering if I could can banana pepper with just hot water and salt. Do have any recipe for it or any ideas? Thank you
Thanks for watching!! I don't know of any tried and true recipes with just salt. Usually the safety standard is- if it's non acidic, you have to add acid. It helps with the long term preservation. You may could try different types of acid, such as citric acid or lemon juice.. or you may could look into oil packing, like how they do roasted red peppers.. but I don't personally know any other alternatives. Sorry I can't be more helpful!
Your the 1st video Ive watched that used a glass top stove . Have you had any trouble with your stove top and canning? What is the brand name of you water bath canner?
I never had any issues with my glass top stoves. You'll want to Google or check your manual to see if your stove is rated for canning. I now use a gas stove and really love it.. but you gotta work with what you have 😉 I'm not exactly sure of the brand name of my water bath canner, I want to say Granite Ware perhaps. I found it at our local Tractor Supply.
I feel like this recipe specifically made them not as crunchy as I like them.. but there are a few things that you can do to help. I wrote them in the description box 🥰
When they are fresh, they have moreover a bell pepper taste, very mild. After they've bee n canned this way, they have a pepperocini like flavor.. zesty and tangy!
I'm sorry that happened!! Make sure that you are using as fresh of peppers as you can... and soak them in ice water before packing. You can also add products like "pickle crisp" to help hold their texture. Or if you want to keep them more organic, you can add in a few fresh grape or oak leaves. They have what's called tannins in them, and will release some into your jars, helping keep your pickles crunchy. Best of luck!!
