Pickled cabbage rolls with meat
Ingredients and recipe:
Meat - 700 grams (400 grams of pork and 300 grams of beef)
Sauerkraut - 2000-2500 grams
Bacon - 150 grams
Onion - 2 pieces
Rice - 100 grams
Tomato sauce (homemade) - 400 milliliters
Vegetable oil - 4 tablespoons
Salt, pepper, thyme, bay leaves
Chop the meat.
Cabbage with thin leaves is good for sauerkraut rolls. The cabbage is cut around the spine, so that the leaves can be detached more easily. Cabbage that is too sour or too salty is left in warm water for a few hours, then washed in several waters and drained well.
Prepare the sheets for the filling. The large sheets (for two rolls) are cut along the thick rib, on one side and the other, removing the rib, then cut in half. For small sheets, remove the thick part from the spine.
Chop the onion.
Lightly fry the bacon on both sides in a little vegetable oil, then remove it to a plate.
We put oil in the same pan and saute the onion. The onion is ready and we put it aside to cool.
Season the meat with salt, pepper and thyme. We mix and add the cooked onion and the rice (washed, soaked in water for 3-4 hours and then drained). Mix and gradually add 150 milliliters of water.
Put a teaspoon of the minced meat mixture on the cabbage leaf and form the rolls by inserting the free ends inside. Or we turn the cabbage sheet at one end over the mince and start rolling from the longer end until the whole sheet is wrapped, then we also insert the remaining free end inside, as in the video.
Carefully cut the rest of the cabbage leaves.
Put a spoonful of vegetable oil in the cooking pot (of 3-4 liters), then chopped cabbage, sausages and bacon, in overlapping layers.
For flavor and taste, put peppercorns (20-25 pieces), thyme and bay leaves, 200 milliliters of tomato sauce and 200 milliliters of hot water in the bowl.
Pour two tablespoons of vegetable oil on top.
Cover the dish and cook, on low heat, for an hour and a half. Along the way, add the rest of the tomato sauce.
After an hour and a half, place the pot without a lid in the oven preheated to 180 degrees for 30 minutes.
The rolls are ready!
