I made this cake about a week ago. Was a hit and will make again. The only thing I did different and not on purpose was I could only find a 15oz can of cream of coconut. Since I had never used it before I mixed the whole can with the sweetened condensed milk....I wasn't scared(LOL) just went for it and it was just fine. A great go to cake that most will love, except the coconut haters. Can't please everybody!
This takes me back to my childhood! I haven't thought about cream of coconut since Momma made this when I was a kid. The only thing she did different was toasting the coconut for the top of the cake. A true classic. Thanks for bringing back such sweet memories!

Hi Talli Faye 👋 First off, you look so pretty in those colors. You are always able to pull off bright colors beautifully. If I try, I look like a Mr. Yuck sticker or "Hey Kool-aid" 🤣 That cake looks so good. I can't believe you've never used Coco Lopez before. I use it when I make my coconut cream pies and Almond Joy Fudge. One of my favorite cakes is called a Pina Colada Party Cake. I got the recipe from the back of a yellow cake mix over 30 years ago. It's a poke cake too, but with cooked pineapple syrup poured into the holes. It has a frosting on it that has a couple of drops of rum extract in it and topped with toasted coconut. Visit Nova Scotia! It's been raining here all day, as it often does. PS....for years I've done this came mix hack: butter instead of oil, milk (or cream) instead of water, one extra egg, and add 1 tsp of vanilla. It's not exactly like homemade, but close!
One of my favorite drinks is a Pina Colada. My mom used to make them in the blender all the time. I am gathering the ingredients to make this cake right now. I can't wait to see how it tastes. Also the longer in the fridge the better it gets. I dont put the cool whip on until the cake has cooled Instead of using the milk can use the bigger can of creme of coconut
The Pina Colada cake looks amazing! When you got a few drips of cherry juice on the whipped topping I wondered if you would do something with that. When you just put more drops of cherry juice on it I laughed out loud and knew that’s exactly what I would have done!! Don’t be scared… right? Love your videos… thank you.

Yummy I took coconut in my cake mix and then when it came to the whipped cream I put the coconut and more pineapple in it then spread it on top lol then the cherries lol and sprinkle more coconut
