Hi.. the video was good. Generally when you add coconut milk(a thickening content) you don't need to add heavy cream again. Just put the flame between low-medium and cook for another 10-15minutes with the lid open, so that the water evaporates from the curry to get thicker. Just a suggestion. Thank you.
This chicken curry recipe is 💯 legit! I tried this recipe. It is my first time to cook chicken curry as I am not a fan. Yet i ended up cooking this as I am craving (chicken biryani) for lunch. I would say: This recipe didnt fail me. Delish! Yummm! Frying the potato gave the whole dish a different taste. Your fam will surely love it and if ur not really cooking regularly like me, ur fam would think ur an expert at this. Thank u Chef for sharing this recipe and easy to follow as well ❤❤

Ooh I love this! Just an observation with how my Indian friends here in the UK cook their curry. They would normally put the powdered ingredients (curry, turmeric, cumin, etc) while frying the onions and garlic first before the meat. Though generally there is no "right way" of doing it, the idea of cooking the powdered ingredients first is just to make the curry flavour pop-out and stick to the chicken/meat once added to the mixture. The curry flavour goes into the meat further (sort of marinating it while cooking) rather than just taste it in the sauce. But I would definitely try this Chef Vanjo plus that optional heavy cream ingredient.
Great observation. There are lots of ways of doing it. I would rather rub the powder all over the chicken before cooking though for the same purpose. I appreciate your comment.
@@panlasangpinoy I also used the Indian way of adding the curry + herbs into the saute prior to adding the chicken, but rubbing the curry into the chicken prior to sauteing would be another great idea worth trying, too.

One of my favorite dishes from among the small number of recipes I've 'mastered' enough (meaning, cooked 2-3x) to cook without consulting my cheat sheet, hahaha. But the biggest learnings for me, watching your video, were your uses of turmeric, to further enhance the curry shade, and of heavy whipping cream, to thicken the sauce instead of simply adding more coco cream and reducing it. Those are very novel ideas I must try!! Loved it, Chef, and again, huge thanks!!
