This pistachio and herb crusted lamb rack is such a delicious dinner idea. It looks vibrant and is full of delicious flavours. This would be perfect to serve at a dinner party or celebration.
I like to pack the crust with herbs like rosemary, mint, garlic, pistachios and breadcrumbs.
I baked the lamb at 180 degrees celsius (360f) for 15 minutes then allowed it to rest for 10 minutes.
