Pizza should cook evenly on both sides (top & bottom) at the same time.
If the oven floor is not at the right temperature (too hot or too cold) there is not the right heat balance between top and bottom.
- When the oven floor is too hot (like in this case), and we see that it is starting to burn on the bottom, we can lift the pizza with the peel, so it will cook more on the top.
- When the heat balance is just right, the pizza must be cooked in the same spot, otherwise it will burn underneath.
- When the oven floor is too cold, and we see that the bottom is not cooking enough, we can move the pizza to a different spot so it receives more heat from the oven floor.
