As a child, I liked them - as an adult, I love them - "Pizza Fritta" or fried pizza dough is an Italian classic treat, that can be eaten any time of day, enjoyed on its own or as part of a meal, or an anytime snack. Simple to make and so tasty!! Enjoy
Dough Recipe
• Artisan Bread - simple...
“Pizza Fritta”
(i.e. fried pizza dough)
Ingredients
• Pizza dough (homemade or bought), grape seed oil or sunflower oil or veg. oil, salt to taste (optional icing sugar and maple syrup)
Method
• Cut off a small piece of pizza dough (about the size of an extra-large egg) and with your hands, form it into a thin roundish shape (i.e. about 5 - 6 inches in diameter)
• Put oil in fry pan, about ¼ inch deep and bring up to about 350 degrees F.
• Place round thin pieces of dough into the oil, cook on medium or medium/high heat and fry until golden - turn once, and fry other side till golden brown in color as well.
• Remove from pan - Add salt to taste and enjoy this traditional Italian treat 😊
• (optional - for “sweet” pizza fritta, you can use icing sugar instead of salt, or you can use maple syrup as well)

Ivo’s very own, Special Pizza Dough recipe
Ingredients
• 125 gm double zero flour (white 00 flour) (high protein is best)
• 125 gm white flour (high protein is best) (unbleached is preferred)
• ½ tsp yeast
• 75 - 77 gm warm water (80 - 90 DEG. F) (or ¼ cup + 1 TBSP)
• 100 gm of warm milk (80 - 90 deg. F), preferably skim milk i.e. 0% (or use ½ cup) (can also substitute with water if needed)
• 1 tsp table salt
• 3/4 tsp honey
• ¾ tsp diastatic malt powder (this is optional but make a big difference)
Method
• Add honey and yeast to your warm water, let stand 5 mins
• Add salt, yeast, and malt powder to your flour, and mix in
• Add the warm milk, and the warm yeast water, to your flour
• Mix together and then knead for 10 minutes (8 minutes min)
• Cover with plastic wrap and a kitchen towel, let rest for a min. of 2 hours
• Use same day, or, refrigerate and use 1 or 2 days later

My Norwegian grandmother used to make fried bread for her kids on bread baking day. Probably much the same. Good food.

These sound like something I grew up with, it’s a Hungarian dish and the phonetic spelling is “long-gauche”. We ate them with salt, sooooo good. The first time I had a Canadian Beaver Tail I almost cried, they’re exactly the same thing. 😘

Lovely! Dip them in hot butter and Honey! I was so happy you mentioned your pan. I have the same pan I use for frying Taco Shells and anything that needs a good fry!

Grandmom and Aunt Anna made these every Sat. During the winter. We had these with gravy or sugar.

My mom made these for us 50 years ago. The 1st batch were served with a tomato sauce spread over, then we finished wirh a sprinkle of sugar as a dessert.

Where might I get the thermometer that you’re using in the video? You don’t have to have it submerged in the oil, which appears to work well since you’re working with a shallow pan of oil rather than deep frying!
