Pizza Margherita with Parmigiano Reggiano | Gennaro Contaldo

This Parmigiano Reggiano Pizza is certain to get the pizza party going! Simple and delicious, you can follow the recipe, which makes 2-3 large pizzas below.
INGREDIENTS
To make the dough:
500g Plain flour
10g Salt
1 x sachet Dried Yeast
Approx. 325ml Lukewarm water
For the toppings:
300g Tinned plum tomatoes
Salt & pepper
Extra virgin olive oil, for drizzling
30g Parmigiano Reggiano, grated/shavings
Basil leaves
150g Mozzarella, roughly chopped
METHOD
1. Combine the flour, salt, and dried yeast in a large bowl. Gradually add lukewarm water and mix well until you obtain a dough.
2. Shape the dough into a ball and leave to rest covered with a cloth for 5 minutes. After this, the dough will be more pliable to work with.
3. Knead the dough for about 10 minutes until smooth and elastic, then split into 2-3 balls. Knead each pieces for a couple more minutes and shape into a ball.
4. Cover the dough with a slightly damp cloth and leave to rise in a warm place for about 30 minutes, until it has doubled in size.
5. Meanwhile, crush the tomatoes slightly with a fork, season with salt & pepper, and mix well. Preheat the oven to its highest setting.
6. Sprinkle some flour on a clean work surface and spread the dough into a circle, making it as thin as possible without tearing it. Sprinkle some breadcrumbs on 2-3 large baking trays and place the pizza bases on them.
7. Drizzle a little olive oil on each base then spread a little of the tomato evenly. Drizzle with olive oil, sprinkle with Parmigiano Reggiano, add a few basil leaves, and top with some mozzarella.

I love Gennaro because he doesn't come off snobbish whatsoever - "Stick it in the oven, it doesn't matter if you don't have a wood fired pizza oven" There's plenty of chefs out there who'd disparage you for using an electric oven but not Mr Contaldo 😎👍

Well the truth is just that normally in an electric oven the pizza dough will never turn out the same.

It doesn't matter much if it's an electric or wood fire oven. What does matter is the heat. And you can't get this result with a conventional oven. Especially with this water-flour ratio. You probably get a very dry, crunchy pizza.

@@ozanyener The reason why electric oven for pizza are often shunned is because they dont really deliver any of the imperfections of wood fire nor do they cook the same and therefore dont produce the authentic traditional results Is the hate justified? No Is the hate logical? Yes Making pizza is 30% about ingredients, 70% about method I speak from experience when i say you will NEVER achieve the result of a wooden fired oven with an electric oven unless it is specifically engineered to literally simulate wood fire which is a very rare kind of electric oven if it even exists You will NOT find anything that even comes close to an artisan pizza in chains like Domino's, they all use standard electric oven and despite what they all claim their dough is low quality at worse or average quality at best

@@xGoodOldSmurfehx i'd argue about the ratio between ingredients and method.. i made amazing pizza that was truly better than a lot of restaurants in my shitty old frigidaire electric oven. but you do have to make the dough, find good cheese and passata

Me and my 10 year old Daughter absolutely love Gennaro, every weekend when my daughter comes round my house we watch Gennaro contaldo and then go shopping for ingredients and cook along watching Gennaro. He inspired my Daughter to eat really good food, and now my 10 year old daughter can cook many dishes from scratch by herself and her food is miles better then most places to eat in my area. This weekend we are making the chocolate ricotta cannoli which Jamie O and the main man Gennaro did recently on Jamie Oliver's channel.

He explains everything, from making the dough,using starterdough(poolish or biga) to using the right ingredients, and how to use the woodfired oven. Evertrhing u can think of is on his channel. I learned a lot from watching his video's ! Is anyone else really confused by the times? He says leave 2 hours then make the balls and then leave 2 hours. Fine and then the written directions say 30 minutes and that’s it. WEIRD

15 grams of dry yeast on one kilo of flour 🤣. And then the transformation from 15 gram dry to 10 gram fresh yeast. This guy really has no clue about pizza making 😅 or at least he pretends to.

Hang on Gennaro! I love you, but you burnt your basilicum inside the oven! You can even see the burnt black leaves on the pizza in the vid. Basilicum you have to add after baking the pizza dough in the oven because it will burn in the heat of the oven...
