Becky from Acre Homestead taught me to do this, as well! I don't cook hardly any of the same things she does, but her freezer meals are still a huge inspiration for me.
One more quick "meal start" idea: if you put a few pounds of ground beef and a couple of diced onions in a lidded pot on the stove on fairly low when you first get started cooking it will just be there in the background doing its thing without needing much babysitting, other than a quick chop every 10 minutes or so. Drain it and throw it in the freezer in 1 lb bags, it's a great start for tacos, or spaghetti sauce, lasagna, so many things!
I love this idea! I did taco meat in advance once before but found myself annoyed that the bags were all seasoned for tacos.. plain cooked ground beef definitely would have given me more options!
@BrownFamilyGoods when I get a large roll of ground beef, I do half for taco meat and half with onions and garlic. Then freeze in meal portions. Great for nachos, tacos, quesadillas and spaghetti or any other casserole or chili
I subscribed. I like the 2 people cooking. I am a widow, ,but I can prepare the extra ahead to make life easier for me on days when I am not feeling up to par. Thank you.
Hi from Maine. Just found you and subscribed! Just what I was looking for. There aren't many cooking and meal prepping for two. Looking forward to seeing more!❤😊
New subscriber here and I totally love two person meal prep videos! You are one of the very few who do the small batch meal prep (which is how I like to do it). Have you tried the Souper cubes silicone trays yet? Girl! With just one set- the two cup version. I am going about my regular meals and putting some in the freezer each time and it is lifechanging!!! Even with lasagna- I made a full recipe and when I went to assemble it I made the two pans in the souper cubes, and then one small casserole dish for that night. So we had dinner, left overs the next day and EIGHT mini lasagnas that were individually frozen after baking in the silicone molds! Brilliant. You need to try them. Best part is they store perfectly in the reusable zip lock bags!
Also a retired couple and I hate cooking big meals now. Love your content...I actually paused the video and added the Brazilian marinade to my shopping cart.
Yes yes 🙌 small meal prep for the two of us ! I haven’t retired yet however I’m tired at the end of the day and even though I don’t mind cooking I will prep when I have time ! I subscribed 🙏 great ideas ❤
Brilliant ❤thanks for sharing - I never tried this kind of meats marination in portions in the freezer. Always from the scratch and it takes me a lot of time. Yes, you live and learn. 🙌
For your plain chicken cutlets, consider adding a milk and salt brine (about as salty as sea water, or pasta water). This helps to tenderize and season the chicken as it thaws - it will be so juicy, and no added flavor!
Thank you so much for this video. There's just two of us. I've been looking for a channel just like this. Plus if the grandkids come over I can just pull out another bag and wa lah its done! Thanks
Add some cinnamon or pumpkin spice to the sugar you sprinkle on top of the pumpkin muffins for even more flavor. That Honey Mustard Chicken Thighs recipe from Acre Homestead is a definite keeper. I always make two batches and freeze them for a quick or vacation meal. Super tasty and garlicieiscious!
I subbed because of the dog. Lol I love freezer meal prep. We are a family of 2 also. I cook up a pound of ground beef, separate it into bags, and freeze for later use. Also, I mix all ingredients for a meatloaf and freeze it. Nice and convenient.
Hi. I just found your page and I love your content! You have given me some great ideas of stuff that I can put in my freezer. The Pork Chops have me most intrigued because I didn't know that you could freeze the meat with the coating on it. I always feel bad about throwing away the extra because I never cook a big portion. Do you thaw it out before cooking it? I would love a video of how it comes out of the air fryer.
for those pumpkin muffins you made...the link you gave was for Bobby Flay's recipe and in looking at the recipe from the link, it talks about reducing down apple cider from 1 cup to a 1/4 cup for the recipe, and I didn't see you deal with that at all??? is this still the recipe you used in your video here?? Just wondering!

Er no! Thats a guaranteed way to spread bacteria all over your kitchen! Washing meat has been debunked for ages now but i see comments like yours when I watch American youtubers, please look up CDC guidelines, if you cook your meat correctly it will kill any bad bacteria.
I can barely hear you when you talk to the camera. The only time I hear you well is when you narrate what you are doing. I have my Dell woofer and speakers all the way up.
That is good to know Denise. I have a microphone on the way that I hope will help with sound quality going forward. Thank you very much for being here!
