At 2:50, you generally want to take. If the positon is different ( for example nf6 instead of c5) then you want to play nce2 and c3. (Im also a Jobava player so dont worry lol)
Yes, I've seen other positions where I shouldn't take, but yeah, it's hard to remember all the nuances, I think I'll constantly be questioning if I should take a pawn on C5, it's a common question. So you're essentially saying, if they have pieces developed, don't take, if they don't have pieces developed, then do?

After ...Qxg1 you had Qa3! only move. I didn't even understand the idea without putting it on the board... Really difficult move to find especially after believing you lost all the advantage.
