Made this tonight; it was great!! I improvised a little on the spices - used s&p and garlic instead of MS Grit; and used The BBQ Rub + cayenne instead of Hot Rub. The pork was perfect; the onion - apple jam was a great combo. And the mustard and Brie added some great flavors that stood out (they didn’t just blend in). This is a recipe we’ll repeat often!

You mentioned deer hunting in this video. I have an elk roast in my freezer that I don't want to ruin in a cook. A video on a smoked elk roast would be awesome! Do you pull it for sandwiches or slice it like a roast? What's the best option?
When I read the video title I immediately thought those would fit perfect in the front pocket of my hunting jacket! Those Drake jackets have the little breast pocket that is perfect for a biscuit in the deer stand. Going to have to try this.
