The sbriciolata is baked in the oven so that a nice crispy crust forms on top and a soft, stringy heart inside. Potato sbriciolata is good hot but also cold, making it suitable for lunches to be prepared in advance or lunches out such as rustic ricotta and spinach pizza, focaccia barese, focaccine, meat calzone or traditional Apulian onion calzone.
INGREDIENTS POTATO CRUMBLE - 24-cm baking pan.
4 potatoes - 800 gr
300 gr of sausage
150 gr string cheese
50 gr Parmesan cheese
About 5 tablespoons oil
40 gr flour
A sprig of rosemary
40 gr breadcrumbs
Half an onion
30 ml white wine
1 egg
Salt
Pepper
DETAILED PROCEDURE FOR MAKING A GREAT POTATO CRUMBLE QUICKLY AND EASILY:
Boil the potatoes for 40 minutes.
A splash of oil in the pan and add the onion and rosemary sprig, add the sausage
Add the white wine and as soon as the meat is cooked turn off the flame
As soon as the potatoes are cooked you can peel and mash them
Season with egg, salt, pepper, mince some rosemary, flour, parmesan cheese ( leave some to put on the surface), 2 tablespoons oil. Mix everything together.
Brush the baking dish with egg and put the breadcrumbs in it.
Put the mixture in the baking dish forming a kind of shell: one layer and a border to contain sausage and cheese
Remove rosemary and put in sausage
Preheat oven to 200 degrees static
Add the cheese slices
Create the surface of the potato crumble by placing the mixture like potato flakes
Then add parmesan cheese, breadcrumbs and oil
Bake at 200 degrees static for 35 minutes
Serve the potato crumble warm
