When I ordered cepelinai for the first time while I was in Lithuania, the waiter looked at me and asked If I wanted a full portion ( bc I'm a very petite girl :D), and I was like "yeah, of course I want a full portion". And she brought me 2 giant cepelines with pork filling and thick sour cream sauce. I was hardly able to complete one, and had to ask to pack the rest to take away :D

These look delicious! We have a similar dish in Sweden, except it's filled with salted pork. You boil them and you know they're done when they float to the surface :)

Hello there my fellow Lithuanian I am planning on making cepelinai for my dad this weekend. It is his birthday and I'm doing this as a surprise. I have two questions I need answered ASAP 1. Many of the recipes call for half grated potatoes and the other half done in a potato ricer. Is this necessary for the dumplings to come out correctly? I also found another recipe that said I can finely grate one half and then with the other half I can chop them into chunks, boil, cook, drain and mash them and then combine the two. Do I have to rice half of the potatoes? I see you do not rice yours. Does this change the consistency or how well they hold together? 2. Next, I am wondering if I can prepare the dumplings and stuff them with meat and keep them in the fridge over night? I know it will be time consuming for me to make these beauties, especially because I have never done so before. If I have to wait to do it all over at his house I don't think it will work out. Can I prepare the potatoes, add the beef and make the dumplings the day before and keep them refrigerated? Or does it all have to be done the day of?

It is a very difficult recipe to master first time, the main thing is to drain all liquid from the potatoes!!! goodluck!!!
