Yes to another potato reset! Your last one is what helped me get back on track. I've known for years what I should be eating but always get off track by including too many nut butters or higher calorie dense sauces. Something clicked when I tried your sweet potato chocolate pudding and watched your reset. Watching you cook and be so creative with food is motivating. Thank you for all you do YOU ARE AWESOME!

My father used to make the most wonderful vegetarian Eggplant Lasagna! The eggplant replaced the pasta … he salted and baked for a short time, the eggplant, to remove some of the water before using it. I bet you could use your tofu mozzarella as the cheese! He also used mushrooms as I remember. Oh, it was wonderful!
Definitely would love to do a potato reset. Also, love having the kiddo's in your kitchen, they are so cute, and love that they are learning this way of eating/cooking as well. Skills for a lifetime! This potato lasagna looks so good, reminds me of a scalloped potato or a shepherds pie type of meal that we have here in Minnesota, USA.
I love that ypu didn't even have to put in any tapioca starch and pre cook the cheese part..this looks so easy! I'd live to mix in long thin slices of zucchini!
